Heya mrrallz, it's not clear whether you want to make milk chocolate from scratch or just want to make things that have a milk chocolate flavour such as cakes or icing. Chocolate making is a specialised thing, not saying that you can't do it it's just that it's something that you would have to learn to do. There's a recipe on veganbaking.net for white chocolate made from scratch if you're interested in learning about chocolate making.

For milky chocolate Sojasun, if you ever go to France, makes a really good one, but it's also more expensive than my regular calcium enriched soymilk, so usually i just make it myself. I buy raw cocoa powder. This is the best because all the other ready to use chocolate powders are loaded with sugars, spices like cinnamon, which i do not digest too well, and sometimes powdered milk, which of course is a no go. I also use cocoa powder in my chocolate cakes.
On medium heat, i start heating milk, then i add two teaspoons of cocoa powder (2 teaspoons per cup) and mix well with a whisk. I usually wait until the milk is warm to add the cocoa powder, because it dissolves much more easily in hot milk. When it's hot enough, you can take it off and pour it in a mug. Then you can add your sweetener of preference, white sugar, cane sugar, agave syrup is good, as well as rice syrup, or honey (i do use honey, especially in the colder months as i get respiratory issues very easily, and i know where it comes from).

I'm sorry that you get respiratory issues but I don't think that really justifies honey from a vegan perspective. I know you're trying your best but does knowing where honey comes from really make it better?

Aurore there are lots of other ways to help with your respiratory issues without using honey. If you go to natural store, not sure what they have exactly in France, you can ask for some suggestions (: I know that my sister drinks hot tea with agave and that seems to really help her (:

I have some omni friends who 'know where their meat comes from'. Guess that's OK then...
