A long time ago I thought being a vegan would require me to purchase expensive mock meats, tofu etc. which were not readily available where I lived anyway.

My diet now largely consists of potatoes, which according to research are full of nutrients can are sufficient for a human being to healthily survive on and only lack vitamin A & D (see http://en.wikipedia.org/wiki/Potato#Nutrition ), and beans, which are also very nutritious, as my main carb sources.

Both can be prepared easily in hundreds of ways and are very cheap.

If you know people struggling to go vegan and wondering what they will replace the meat with, potatoes and beans should be a leading recommendation.
