Thread: whipped cream and sweetened condensed milk recipes?

    Default whipped cream and sweetened condensed milk recipes?

    does anyone know of subrtitutes for these? I miss whipped cream (so much!) and always find recipes I want to modify that have "sweetened condensed milk" and I have no idea how to replace it. tips?

    Greenfaery,hope this is just what you are looking for
    Sweet and creamy topping (whipped cream)

    1/2 lb soft silken tofu
    1/4 cup oil
    1/4 powdered sugar
    1 tsp vanilla
    1/2 tsp lemon juice
    1/8 tsp salt

    blend all in a blender and put in fridge to set up until you're ready to use it! lasts 3-5 days

    Default Vegan Sweetened Condensed Milk

    With the holidays fast approaching, I thought I'd post this recipe. I have not made it myself yet, but it looks like a very fast and easy recipe to make. And, may enable you to use some recipes you might otherwise toss aside.

    Vegan Sweetened Condensed Milk

    1/3 cup boiling water
    4 tablespoons margarine
    3/4 cup sugar
    1/2 teaspoon pure vanilla extract
    1 cup powdered soy milk


    Using an electric mixer, blend together water, margarine, sugar, and vanilla.
    Add powdered soy milk and blend until thick. Store in refrigerator for up to 1 week. Makes 14 oz.
    If at first you don't succeed, laugh as you set it ablaze!

    Thanks! I was just thinking about using this for my pumpkin pie this November. (Trying to veganize an old recipe)

    I *know* I gave out 2 of my recipes for this somewhere! It was to HappyCow! She started a thread about substitutions and asked about mixing vegan cream cheese with sugar to make whipped cream...it should be easy to find

    You can buy "egg replacer" (mainly soy protein I think) but it depends what the function of the eggs is in the recipe. I believe beaten egg whites are often used to make the cake light, in which case you may need something like bicarbonate of soda and/or baking powder (not sure whether these have the same names in the USA as here).

    People are often advised to try some vegan cake recipes to get the hang of it before attempting to convert regular recipes. Anyway I'm a cake dunce so I'll shut up - someone knowledgeable will be along in a minute

    well, the recipe that prompted this question was pancakes, my sister bought me this "dairy free gluten free" vegan pancake mix from Trader Joe's and the instructions said to add two eggs and water! what a marketing scam! I think maybe its for fluffiness and for binding????????

    P.S why did i put this question under condensed milk and whipped cream?????

    in baking, you can replace eggs with (depending on recipe) vinegar, soaked linseed, applesauce ... all of those are good for baking. For holding things together (ie, cutlets), arrowroot mixed with water is good.

    Pancakes don't need no eggs! Google vegan pancakes and you'll get loads of scrummy recipes. I make banana pancakes with flour, milk, vanilla, sweetener and baking powder.
