    Default Sprouted Buckwheat Pancakes

    Has anyone sprouted buckwheat groats, and used them to make pancakes? If so, how did you do it? Did you have to dehydrate the groats first?

    I sprouted buckwheat the other day, and then blended the sprouts with some maple syrup and water to make a pancake batter, but the pancakes didn't work out; the batter didn't stick together. Maybe I needed to add egg replacer to the mixture?

    Thanks for any help that anyone can give.

    I'm not surprised it didn't hold together. Maybe include some un-sprouted flour? Or use conventional flour to make pancakes and use the sprouts in a fresh salad!

    I aggree that it's an egg replacer issue. I've used ground flax seeds to great success.

    This is a recipe for soaked buckwheat pancakes, and having make it several times, I bet that it would work just fine with sprouted grouts:

    2 cups raw buckwheat
    4 cups water, divided
    1/4 cup flax seeds, freshly ground
    2 Tbsp lemon juice
    2 Tbsp virgin coconut oil, or olive oil
    2 Tbsp liquid sweetener (molasses, date syrup, maple syrup, etc)
    1 Tbsp baking powder
    1 tsp cinnamon
    1/2 tsp salt

    Soak the buckwheat in 3 cups water over night. Drain, rinse, and place in blender or food processor. Add 1 cup water, ground flax seeds, lemon, oil, sweetener, baking powder, cinnamon and salt. Blend until you have a batter.


    These pancakes were awesome, so I really encourage you to give them a try.
