The dinner I made last night was sooooooooo good that I have to share. I'm sure something similar has been made before but it is my own concoction!
Start by roasting yourself a nice large spaghetti squash!
When that's in the oven, chop up a medium onion and 3-4 cloves of garlic and start frying them on low in way more coconut oil than you think you'll need.
As that's cooking, peel or spiralize 3 medium zuchinnis in to noodle-type strips, and chop 6-8 button mushrooms. Add the mushrooms and zuchinni and allow both to become soft.
Add in a can or so of rinsed black beans and allow them to become warm.
Add a generous handful of fresh chopped parsley.
Salt and pepper the mixture before serving it over the shredded spaghetti squash.
This made enough for two but I definitely ate it all myself. I may add some kale bits next time?
