1. Meat consumption is down, while "all things vegan" are on the rise.
In 2012, Americans consumed 12.2 percent less meat than in 2007. Half of us are aware of Meatless Mondays, and nearly as many are, in fact, eating at least one vegetarian meal a week. A Google search for "vegan.....
