    Default Simple recipe for quiche?

    All I can find on nets is some expensive recipes with 20 + ingredients. I need something really simple (and proved as good and tasty).

    I roughly process a block of firm tofu (smoked is good) with a chopped onion, half a block of cheezly (mix of flavours is good), 1 heaped teaspoon tahini, 4 heaped teaspoons of dairy free cheese sauce powder, 250 ml unsweetened soya milk, teaspoon of dried parsley, and a few vegan bacon rashers.
    Adjust salt level (ie smoked tofu is usually salty so needs less).

    Pour into pastry in a flan dish, and press in some mushroom slices, then add some tomato slices and bake for about 40 minutes.

    I usually make my own very short pastry with oil, wholemeal bread flour, plain white flour, salt, and don't nlind bake it.

    Best left to cool a little before serving.

    Not sure if you can get anything like the cheese sauce mix - it helps to set the mix as well as add flavour.

    I appreciate your answer Pob. Thanks. But it's totally not simple. Half of ingredients are expensive or I don't have a place to buy them.

    It's simple in the fact you just chuck it all in the food processor for a few seconds, and it's tried and tested with non-vegans, but yeah the tofu and fake cheese aren't cheap.

    You can skip the fake bacon if you use smoked tofu. You can skip the tahini. You could substitute the cheese sauce powder with cornflour, nutritional yeast, salt and black pepper.

    I have done this using spinach instead of broccoli. I also steam a sweet potato and process it with the tofu for an extra richness and add a little more liquid to it. I have used almond milk in place of soy milk. There is no nutritional yeast, no tahini, no other really expensive ingredients. The turmeric might be expensive but you can leave it out and use something else like dijon mustard or marjorum etc.

    Had another thought, a chickpea frittata would make a pretty good substitute for a crustless quiche. Might even be possible to bake it in pastry like a quiche.

    I did some mixture of both recipes.
    Home made pastry and tofu from local.
    It crumbles, short in diameter, but tasty.
    Oh, and I kept it for too long in oven.
    Next time better.
