    Default Any good biscuit/cookie recipes?

    I'm planning on baking some biscuits but I'm having problems finding a recipe.
    All the recipes I've found require eggs, but I don't have any egg replacer. Any suggestions?

    My other half has a fantastic dark rich chocolate and coconut one which is also wheat free if you want it to be I will get a copy over the weekend and see if I get chance to post if back on here ASAP.

    Oatmeal Chocolate Chip Cookies from Vegan Vittles by Jo Stephaniak:

    1 cup whole wheat pastry flour
    1 cup quick cooking rolled oats (not instant)
    1 cup unbleached cane sugar
    1/2 teaspoon non-aluminum baking powder
    1/4 teaspoon salt

    1/3 cup water
    1/4 cup vegetable oil
    1 1/2 teaspoon vanilla extract

    1/2 cup non-dairy chocolate chips
    1/3 cup coarsely chopped walnuts

    1. Preheat oven to 350F. Coat two baking sheets with cooking spray or use a silpat (silicone baking pad that's fantastic)

    2. Place flour, oats, sugar, baking powder and salt in medium mixing bowl and stir them together.

    3. Place the water, oil, and vanilla in seperate small bowl and stir them together. Pour this liquid into the flour-oat mixture and mix well to make a stiff dough. Stir in chocolate chips and walnuts and mix until evenly distributed.

    4. Drop by small, rounded spoonfuls onto baking sheets at least 2 inches apart. Do not flatten the cookies, they will spread as they bake.

    5. Bake for 15 to 18 minutes or until cookies are lightly browned.

    6. Let the cookies rest on the baking sheet for 5 full minutes. Carefully loosen them and transfer them to a cooling rack using a metal spatula. Cool cookies completely before storing.

    Nutritional analysis, per cookie: 72 calories, 1gm protein, 10gm carbohydrates, 3gm fat



    These are really easy to make and delicious however, the instructions say bake until lightly brown but everything in the mixture is already brown. I just baked for about 20 minutes.

    feline1 - amazingly I have ALL the ingredients! I'm definately having a go at these.

    I made them yesterday. They taste fantastic and they're incredibly easy to make. In fact, they tasted so good we (with a little help!) polished them all off . I'll be back in the kitchen this afternoon baking another batch.

    Thanks Rocky, since I posted that recipe-I decided I had to make a batch as well . They're cooling on the rack now as we speak. But they're healthy, right? With the oats and almonds ? I actually substituted instead of oats, a whole-grain mixture of oats, rye, wheat and barley. It looks the same as the oats though. It sounds icky but tastes great.

    I can also post the chocolate-chip cookies recipe I have once I find it.
