Had late lunch at Vietnamese Vegetarian Restaurant:
2 fresh spring rolls with peanut dipping sauce.
1 big bowl of "chicken" noodle soup....mmmmm.....the broth was really lemongrassy!
Sipping on a orange/mango spritzer right now.
Still full from lunch.....might have some warm pita bread with hummus a bit later on.
breakfast: two pieces wheat toast w/ roasted garlic, a tangerine
lunch: three slices pizza w/ mushrooms & peppers, two prunes
snack: a kiwi, half a green apple, a pear, coffee w/ f.v. soy creamer
dinner: clean-out-the-fridge salad (leaf lettuce, shredded carrot, sliced veggie dogs, peas, corn, chopped walnuts, chopped green apple, agave mustard dressing)
snack: barbara's cocoa puffs w/ vanilla soymilk, raspberry tea
biscuits, too many of them
crackers with powdered cheese flavoured stuff on them
half a squash filled with mashed tofu and onion, and mashed potato, yum

L: leftover veg curry from last night's dinner, 1/4 naan
S: soya latte, nak'd bar, apple
Dinner later will be veg sausage and alfalfa sprouts in pitta bread with tomato and herb pasta
Wholemeal toastie with veg bacon and lettuce

Warm salad with spinach, watercress, rocket, spring onion and new potatoes
Veggie burgers (I had 4)
Then a fruit salad
2 cans of cider

feeling a little better than yesterday.
still had to force alot on myself though.

I'm totally ill so am not eating much. However, I recommend this soup for when you're feeling under the weather:
Ingredients:
2 tbsp toasted sesame oil
3 tbsp grated fresh ginger
2 cups chopped mushrooms of your choice
1/2 tsp cayenne pepper
soba noodles for 2 people
4 cups veggie stock
3 tbsp rice vinegar
1 tbsp Braggs or tamari soy sauce
On med. heat, saute mushrooms and ginger in sesame oil for 2 minutes. Add cayenne, noodles, and stock, and bring to a boil then simmer 5 minutes. Add rice vinegar and Braggs and keep on low 5 more minutes.
I've made this also with tofu (add in the last 5 minutes) or with carrots (add at the same time as mushrooms and slice them thinly). I'm sure anything you like would work with the broth.
(Recipe slightly modified from Barnard and Kramer's Garden of Vegan, p. 77).

umm yea my diet isnt very varied right now - im out of a lot of things but want to go through all the stuff i dont usually eat bc otherwise it will never get eaten if i just go out and buy more groceries and im going to california this weekend (was going to be to surprise the fiance but im awful and surprises and am literally incapable of telling a lie especially with a straight face so the whole surprise part didnt work out. he figured it out right away). at least i made a huge batch of the pasta/veggie/tofu thing so that will be two meals tomorrow that wont have to be cliff bars and pb!

Guys, I just have to share my own creation dessert. It's very simple, you only need a mashed banana, a little coconut milk (the creamy top layer) and a few sprinkles of cocoa. It's not something you want to serve at a dinner party of course, but it's great when you just want something sweet and fast.

I went to a Malaysian restaurant tonight and as well as a few glasses of wine I had 4 curry samosas, steamed rice and a coconut vegetable curry. Was soooo good!
Good for you, Roxy. I had a creamy veggie pasta with lots of garlic and olives.
Sauce - baby broccoli, mushrooms, roma tomatoes, peas, zuccini, carrots, kalamata olives, garlic, coconut milk, and a 1/2 vegetable bouillon cube.
