For those of us who love our spices... How do you figure out how much to put in?
I prefer to use a little cup, something I learnt by watching a friend cook.
(Tea)spoons from a recipe, but I always add in a bit extra cos it never looks enough
If I am following a recipe I follow the recipe, unless it's a spice I don't like and then I halve it or leave it out.
If I am cooking/baking I just put in what I feel like

Sometimes if i need a mix of spices i will sling them in a small olive bowl. I can then taste test and adjust to what I want. The first time i follow a recipe i will stick to it perfectly then taste it as i go and make it better (?) next time.
Most of my cooking I just make up as I go along. It normally works out okay.
Blackmail is such an ugly word. I prefer "extortion". The "X" makes it sound cool.
You're suppose to measure out spices?!

I just chuck them in and if it doesn't look/taste right add more or add more of everything else to cancel out the effect of putting too much of one in. This doesn't always work btw.

I'm one of those who just judge it by eye and bung in what seems right; sometimes that doesn't work too well but the majority of the time it's edible.
If it's a recipe I follow it exactly; if it's my own original creation, I go based upon what I know about the properties of the spices and how they might interact with each other and the other ingredients, and from there I go by trial and error.
