yeah. Just a decent wok or stirfry pan, a sploosh of oil, chuck the veg in, give it a stir; a bit later chuck the nuts/tofu etc in, stir etc; then add noodles (if you want - the blue dragon ready to wok ones are vegan, or use your own pre-boiled ones, well-drained); then add your sauce, give a good few stirs whilst heating throad, and VOILA! STIR FRY-A-MUNDO!

Mushroom risotto, ooo that sounds yummy! Could I be very cheeky and ask for your recipe!!
Thanks and peace, Megan x
ooh, me and my sister used to make THE BEST mushroom risotto together.
i'm not sure about quantities, but here's what i can remember, megan:
- make up a pan of vegetable stock (go for 2 pints to be on the safe side) and put it on a low heat, just to keep it hot.
- chop up as many mushrooms as you can and stick them in the microwave in a bowl until they're soft and the juices run. put to one side.
- melt about a tablespoon of pure (or any dairy free spread) in a pan (preferably a wok or high sided frying pan, but a saucepan will work) then stir in a packet of arborio rice (i'm thinking about 500g is what we used)
- when all the pure is absorbed by the rice, put one ladle full of stock into the pan. keep cooking until all of that stock is absorbed, then add another ladle. carry on like this until your rice is cooked. (after the 2nd round of stock, you should add your mushrooms)
- when your rice is almost cooked, season well with pepper (and salt if you really want, but the stock should have made it salty enough)
- ps. you don't necessarily need to use up all the stock, just use enough to get the rice to the consistency you want. and remember that it keeps cooking for a while after, so make sure to take it off the heat when you're done.
pps. sorry about the awful quantities, but you can use your initiative with this recipe, you won't go far wrong.
Ooo hi there JC! That's very kind of you to take the trouble to type up what sounds like a lovely recipe! I know what I'm making for my dinner tomorrow now!!

I'm probably weird, but I love fruit when I'm sick -- bananas, mangoes, strawberries, and blueberries mmmm. Veggies are a lot harder to digest when I'm sick, so I had to really cook 'em down today.
Ahhh I've been sick for five weeks now and it's just getting worse..
