dinner was pizza! made one with spinach,mushrooms and tofu ricotta, one with meaty tofu/tomato sauce, pineapple and cheesesauce, one with pesto, sundried tomatoes, roasted artischoke and a mix of the ricotta and the cheese sauce, one with tomato sauce, pineapple, green pepper, mushrooms, sundried tomatoes, olive tapanade and cheese sauce, and some others. this was FANTASTIC. soooo good.

Breakfast:
2 weetabix biscuits with a small handfull of oats, hot water, cinnamon and nutmeg, mixed together and topped off with soymilk. And a banana.
Late lunch:
Wholewheat cous cous with a bit of pesto, chopped organic dried apricots, loads of different sprouted beans, chopped cooked beetroot, grated carrot and cucumber, and with a sprinkling of yeast flakes.
Snacks:
Loooooooads of organic dried apricots. I've become addicted. And two falafel.
Oh, and two cups of coffee alternative Whole Earth 'Wake Up' drink, and one cup of Yogi Choco tea with soymilk.
I really don't normally like tea or herbal teas... but the choco tea is lovely! I recommend it highly!
Breakfast: Puffed rice, puffed quinoa, chocolate stars, with raisins and soya milk.
Snack: Unsalted low fat crisps. (I actually really like these). Banana.
Lunch: Toni picked me up from work and took me out for a picnic along the river . Hummous, spinach,carrot, cucumber sandwich on home-made herb bread. Some (OK lots of) unsalted Kettle Chips. Pineapple Juice.
Snack: Orange, apple, yoghurt.
Toni was working late, so I finished off some trifle for a just got in from work snack
Dinner: Cheesy cauliflower broccoli leek and onion bake thing, with large baked potato. Plain yoghurt with strawberries and some fresh mint leaves.
B: 3 weetabix with soya milk, a gigantic banana and a cup of chai.
L: 2 slices of rye bread with homous (lots of it!), an apricot soya yoghurt, an apple and another gigantic banana. Cup of "Choco" (Aztec Spiced) Yogi Tea - very nice!
D: Stir fried mushrooms, peppers and tofu with fresh ginger and garlic, soy sauce and rice noodles.
Scoffed over half a large box of Animal Aid Vegan Selection chocolates throughout the day

It sure is, and yes, it is quite nice. I could do without the seeds, but at least that way you know it's real raspberry, I guess.
I'm lucky enough to have a local grocery store with a whole wall of chocolate, most of which is vegan, and I'm slowly but surely trying to work my way through all of them

MMMM...the days when I could eat a whole pizza by myself. Since becoming vegan I've had a very hard time finding said vegan pizzas, and I haven't had the opportunity to make one for myself. The only thing stopping me from it is that it's hard to find a good recipe for making the dough..boooo...Next time you decide to devour a WHOLE pizza by yourself, at least save us (me in particular) a slice
PIZZA HUT PIZZA DOUGH
1 1/3 cup water
2 teaspoons sugar
1 1/4 teaspoons salt
2 tablespoons olive oil
2 tablespoons cornmeal
2 cups unbleached all purpose flour
1 cup bread flour
1 teaspoon baking powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
3/8 teaspoon MSG
1 1/2 teaspoons yeast
(You may use all-purpose flour only for this recipe)
Bread machine: Add ingredients to machine bread pan in order
given or as per
manufacturer's instructions. Set to 'dough' mode.
Food processor:
Place water, sugar, salt and olive oil in bowl of food processor
and pulse
to dissolve sugar and salt. Add yeast, bread flour, all purpose
flour other
dry ingredients. Process until a soft ball forms. Remove from
machine and
allow to rest, covered with a tea towel, about 45 minutes.
Dough hook:
Place water, sugar, salt and olive oil in bowl of mixer and
dissolve sugar
and salt. Stir in yeast, bread flour, all purpose flour, other
dry
ingredients and knead with dough hook to form a soft, but not-too
sticky
dough (about 8 minutes). Remove from machine and allow to rest,
covered with
a tea towel about 45 minutes.
By Hand:
In this case, use only all-purpose flour. Place water, sugar,
salt and olive
oil in bowl and dissolve sugar and salt. Stir in yeast, all purpose
flour,
other dry ingredients and knead to form a soft, but not-too sticky
dough
(about 8-l0 minutes). Allow to rest, covered with a tea towel about
45
minutes.
(*) For a breadier pizza dough - depending on taste and recipe
requirements,
you can add an additional 1/4 tsp. yeast.
Deflate dough very gently before using and allow it to rest a
further 15
minutes before using in a recipe. You may refrigerate dough in
an oiled
plastic bag for up to two days.

A small vegan pizza with a strong asian theme - sweet chilli & tomato sauce, coriander and zucchini (very nice). That, a glass of white wine, a glass of water and a coffee (all at lunch) are all that I have eaten today.

Just a bad time of the year - two close relatives (my grandmother and an aunt) passed away very recently - my gran two weeks ago and my aunt on Friday, both in South Africa so I could not get to see them.
Yesterday was also the 5th anniversary of my father passing away, he also was in South Africa and I did not get to see him before he died.
That and on a more superficial level I did not get a job that I had applied for (and really really wanted because I need to get out of my current work environment). So generally just a crap end of week/Saturday for me.
Still today is a new day and I am feeling much better. The upside of Friday is that I did secure freelance work that I can do from home and if I can pluck up the courage can resign next week from the fulltime job.
Working from home is going to make staying vegan much easier (far less temptation to walk past on a daily basis).
