For the perfect vegan English tea-time treat.
Vegan Sultana Scones
8oz self raising flour
4oz sultanas
2oz sugar
2oz margarine
1 teaspoon bi-carbonate of soda
3-4 fluid oz of soya milk (or enough to bind)
Rub the margarine into the flour, add the rest of the dry ingredients and mix thoroughly. Add the soya milk until the mixture becomes a dough. Roll out the dough to about 1 or 2 inches thick depending on how big you want the scones and cut into shapes with a cutter.
Cook for 15 minutes or so at gas mark 6/200c/600f
Serve with jam and a cup of tea. What else!
