A half pound seitan burger with plenty of fresh salad, chunky 'jacket' chips and lots of dips.
And Pie. Plenty of Pies.
I like it when they have stuff that I couldn't be bothered to do myself, which includes anything deep-fried (although having said that eating much deep-fried stuff makes me feel sick ).
One that did vegan croissants at breakfast would be good, if they could find a way to make them without hydrogenated oil or palm oil - aaargh!

I enjoy a good, stodgy dessert from time to time so I'd like to see jam roly poly pudding with custard on the menu of my dream restaurant and a good choice of cakes!
Any great roasted Mediterranean vegetable dish, whether it be pasta, couscous or rice infused, or just a plain stack with a sauce.
I loves me some med veg.

As it so happens, a nice fellow is opening a vegan cafe near my daughter's school here in Beijing: Asian and western food. I am making a few dishes for him to sample. So far: falafel, babaganouj, brownies, ranch dressing, pesto genovese and a chutney.
Significantly absent from wish-lists so far is anything cheesy. ???
and EmmaPresley, how special should the cake section be? Mirrors/glass shelves or something old-fashioned?

I'd also love a vegan meringue!
ETA I can't think of a cheesy dish I miss enough really. (If this place by you is trying to appeal to veggies and omnis Pat I'd worry about using fake cheese as it will not seem realistic or tasty to them.)

Question: If you had a vegan market/diner in your local area, would you prefer to have
a) any/ the most popular vegan products (includes imports)
b) only locally grown and homemade products native to the area
c) a mixture of a and b
pat I obviously don't know what the make-up of your area is and whether there will be enough veggie and vegans to keep it going without the omnis but I'm always very aware of the need to make sure places have plenty of customers - so they will still be there for me to have lunch or a coffee in!! (I find it frustrating when they don't seem as worried about this as I am!)

Depends if it's a real diner or a fantasy one? If it's a real one then (b) would be better although I suspect you'd have to be a bit flexible as per (c). A restaurant in England that served exclusively locally-grown food might be a bit unpopular in winter as most of us can only eat so many cabbages and root vegetables...Maybe you could mark stuff according to whether it's local or not?
Local veg here is under poly-tunnels most of the year. The rest comes from the South. A few long-distance imports too (kiwis apples from NZ)
There is also growing demand for organic.
Most typical Chinese(Buddhist run) veg places are traditional mock meat style and veg is still a side dish. Ironic, ain't it?
Customer demographic for this cafe is 20-30 yr old female Chinese office worker who is trendy and thinks vegetarian sounds healthy and less fattening.
They haven't tried the brownies yet....

I am in love with these no-bake chocolate oatmeal cookies. I've only just came across the recipe so the novelty hasn't yet worn off! Just made a batch yesterday and am looking forward to having it after lunch-Yummy!
Recipe:
- 2/3 cup maple syrup
- 1/4 cup vegetable oil
- 5 tablespoons unsweetened cocoa powder
- 1 teaspoon ground cinnamon
- 1/2 cup peanut butter
- 1 cup rolled oats
- 1 teaspoon vanilla extract
- In a saucepan over medium heat combine the maple syrup, oil, cocoa and cinnamon. Boil for three minutes, stirring constantly. Remove from heat and stir in the peanut butter, rolled oats and vanilla until well blended. Drop by heaping spoonfuls onto waxed paper and chill to set, about 30 minutes.
