    Default Peach sorbet

    Peaches are cheap at the moment, so my daughter and I used up some very ripe ones we had like this:

    6 ripe peaches
    2-3 dsp demerara sugar (to taste)
    juice of 1 lemon

    Skin peaches by putting them in boiling water for a couple of seconds, then put them into cold water and their skins will peel off easily. Chop into chunks, remove stones and put peach chunks into a blender with the sugar and lemon juice. Blend until smooth (add more sugar to taste), pour into a tub and freeze, stirring occasionally until frozen but not rock hard. Blend again until smooth but still thick and serve, or return to tub and put it back in the freezer, but it will get very hard if you leave it too long. If this happens, blend again before serving

    This was delicious and has a lovely texture. I think it'd be nice with a raspberry sauce made from frozen raspberries mashed with a little sugar.
