Today I made a Moroccan couscous dish for the first time and it was yummy (wholewheat couscous, paprika, cayene, chickpeas, zucchini, golden raisins, dates, cashews, garlic) Yum! Got tons leftover for tomorrow night too.
Freshly juiced apple juice. It was one of the best freaking things I've ever had in my life!!! I hate when off-the-shelf cartons have citric acid added "for tartness". Without that sour flavour, the juice tastes SO much better!!!
I may have to ask for a juicer for Christmas now, to save the $$ that I'll be spending on juice at the deli!

I just had a vegan chocolate cupcake that I bought at the same place as the apple juice. It wasn't all that great, it was pretty dry and stale tasting. I'm hoping that it was just stale (maybe they don't sell too many cupcakes there?), because I sure hope that all vegan cakes aren't that dry! My birthday's coming up, and I want to make myself a moist, fluffy cake.

yesterday i decided to try the "guts" of the pumkin, u know the stringy stuff? I steamed it and then mixed it with some tahini, and stuffed it into a whole-wheat pita...it was THE best, it was sweet and creamy, and super rich tasting!

Not technically the first time I ate, but the first time I MADE and ate miso soup! It was SO good and simple to make, I bought a tub for the first time this weekend of the brown miso paste, and simmered 1 cup of water with some dehydrated seaweed, I added too just a dash of dried ginger and since I had no scallions, I used a few flakes of dehydrated onion. After this gets all nice and hot and simmery, you add 1 teaspoon ( I used a bit more) of miso paste to a bit of water to dissolve, then add this to the "stock". You're supposed to add small cubed tofu to the stock too, but I was too lazy and tired now to cut it up!!
I just had this before bed now, it relaxed me and tasted so yum...

Today I had a medjool date. It was actually the second time I tried them. The first time I must have picked a bad one and it was horrible, but this time it was WONDERFUL! I simply must pick up some macadamia nut butter to put in the middle

I had a GOOD piece of vegan chocolate cake today! It's customer appreciation day at Planet Organic, so they're giving out free vegan chocolate and vanilla cake. I had a piece of chocolate (with tofu icing), and it was SO amazing! It was moister than any non-vegan cake I've ever had. I may have to try and reproduce this cake for my b-day which is coming up!

i went to a vegan restaurant and had sauteed mint leaves with tofu (plus other things added into the sautee) and a fried spring roll...the fried thing wasn't very healthy, but i haven't had anything like that is i can't remember how long, and it was super yummy! o and there was some yummy sweet peanut dressing on the salad (it was soup, salad, brown rice, the spring roll, and then entree for only 6.95 u.s.!!)

I finally broke down and bought some. I've been afraid to, because it might spoil me and make me unwilling to keep buying the cheaper chocolate soymilk. But I needed a treat LOL, and it's SO awesome! It tastes like the soymilk but with no aftertaste! But I'll still have soy, I guess, and only buy this as a treat.

I've never even SEEN almond milk chocolate or otherwise!! I've had rice milk though not nice.

i like things like that though, really i like almost anything if it's vegan and not junk (that stuff gives me a headache unless it's a little treat every now and again...) so i'd prolly like rice milk, i was given some interesting recipes for some as well (thanx to this site)

I just had the yummiest chips in the world. Terra vegetable chips. mmm! I will be buying a lot more of these.. try all the flavors I can.
also, I had pasta with a peanut butter sauce for the first time. very creamy. delicious. I had never cooked with peanut butter before, and I would have never thought to put it somehow on something like linguine. but it gets my approval.
Today I had something I haven't had since I went vegan (November 2004).
It's a Middle Easterny thing: cook potatoes, onions, and carrots with a variety of spices (cinnamon, allspice, cumin, pepper) with chicken. They were my fav way to eat potatoes.
Today my mom was making chicken but veganized the potatoes! She slow cooked them on a pot and went generous with the oil and it was soooooooo good.

This past weekend I had Earth Balance (butter substitute) for the first time and those of you who've mentioned it before were absolutely right...it's wonderful My mom--who's not a vegan--even liked it! I've also recently tried the rice milk chocolate bars by Terra Nostra. It was sweeter than dairy milk chocolate, but I still enjoy it as an occasional treat...it surprised me how yummy it was! (I'm waiting until cooler weather to order some soy milk chocolates over the internet.) I also had more Silk soy smoothies which were really yummy too I went out to eat for breakfast at Denny's when I visited my parents and got plain oatmeal, then put Hershey's syrup on it (I read the ingredients first) and that was yummy too!

I made my first vegan lasagne - pretty damn fine it was, too.
Red layers were made of onion, green and red pepper, courgette, mushroom, with Sainsbury's SO organic bolognaise sauce. Lasagne was the green spinachy stuff. Topping was my own concoction of - white sauce made with wholemeal flour and extra margarine, with yeast extract, soy sauce, and nutritional yeast (I meant to put some mustard in but forgot).
Served it with a grated carrot, spinach and cucumber salad.

Vegan Christmas pud and homemade custard.
Ran out of custard powder so made it with 20g cornflour, 10 fl oz soya milk, 12g sugar, turmeric to colour and vanilla extract to taste.

Don't be too shocked (especially Queen Medjool) but today I ate my first date! Actually I ate 3. Tentatively. I love sticky toffee pudding with them chopped up small, but have always been irrationally suspicious of whole ones.

I tried a new product called "Roast Wheat". It's a meatless roast beef product.
I would only recommend it to people who like meat substitutes.
I quite liked it. Although it was very rich - it's something I'd only eat once a month or so.
It's a good protein source too - 19g per 75g of product.
Today I had homemade carrot and red lentil soup for the first time. I have started making a lot more meals from 'scratch' since becoming vegan and they seem so much more satisying (although I did spend far too long cooking at the weekend when I should have been studying ).
I also found some readymade vegan coleslaw at the weekend - it was the first time I had eaten any for over a year!

I tried Hickory Smoked Tofurkey Slices today. I had them on a sandwich with cranberry sauce and they were very nice!
an entire bag of chips with half a can refried beans and half a jar of salsa. ughhhhhh. tomorrow i start eating healthy again.
Oh I loooove dolmas. They're so easy to make, too, if you can find grape leaves. In the summer I love bringing the fixings into work and assembling on the spot. Plus, they're one of the few Middle Eastern/Greek foods I can eat universally (cursed food allergies).moochbabe

I just had Ross chocolate's lactose free caramel (rice) milk chocolate. It was good, though it has lots of fat and was super sweet (I like the caramel better than the plain rice milk chocolate that I had yesterday.)
