A little salt. Some pepper. A few table spoons olive oil. The juice of half a lemon or less. A little garlic. Maybe some rice or soy milk, or soy creem - or maybe not.
Oh, and one avocado.

Oil isn't needed either.
My guacamole only has avocado, the juice of one lime (no lemons - it makes it funnytasting), a bit of salt, a little pepper, about 1 clove or so worth garlic and some El Pato to give it spice (don't add too much or you'll thin it down). You can also use canned jalapeno juice for the heat, but I like the El Pato better. Mash with a fork until it's somewhat creamy, somewhat chunky. Eat with anything humans can consume.
Sometimes, if I'm feeling extra fancy, I'll put in a half teaspoon of cumin, a roma tomato chopped up, and a bit of fine diced onion.
ETA: if you don't have El Pato, then just use about 1/8 teaspoon of ceyanne pepper.
and cilantro. never forget the cilantro. yum.

(This is my recipe, tried, tested, tastebud approved)
Guacamole!
Serves 4 - 8
Prep. time: 10 - 15 Minutes
Ingredients:
2 avocados - peeled
1 medium tomato - diced
1 Tbs. lime juice
salt to taste
dash of black pepper
Variations:
- Add 1 or 2 Tbs. finely chopped raw onion
- Add chopped cilantro, to taste
- For extra spicy flavor, add a few chopped jalapeno peppers, 1 tbs. chopped onion, 1 tbs. chopped red bell pepper, 1 tsp. chili powder, & chopped cilantro and additional black pepper to taste
Directions:
1. Mash avocados until they are very smooth & creamy
2. Mix in other ingredients
Serving Suggestions:
- Serve as a dip with chips, bread, or crunchy veggies
- Use as a condiment with Mexican and Indian entrees
- Use instead of mayonnaise on sandwiches
- Serve on top of cooked rice
- Stuff inside tomatoes
Notes:
- Store in an airtight container & keep in the refrigerator
(Avocados turn brown when they are exposed to air, but, still OK to eat)
- Eat within 24 hours

Roasted Corn Guacamole
3 hass avocados, peeled and coarsely chopped
2 ears corn, roasted and kernels removed
1/2 red onion, finely chopped
1/4 cup coarsely chopped cilantro
1/4 cup fresh lime juice
2 tablespoons Tofutti Sour Cream
Salt and freshly ground pepper
Combine the avocados, corn, onion, cilantro, lime juice, and sour cream in a bowl and mix well. Season to taste with salt and pepper.
Sometimes I like to chop 1 garlic clove in my guacamole. Yum!!!!

Black Bean Taquitos
12 corn tortillas
1 cup refried black beans (can substitute pinto or other beans)
1 1/2 cups light flavored olive oil
salsa
guacamole
Tofutti Sour Cream
Directions:
Heat olive oil in a pan at low or med-low heat for 2 minutes or until hot. Microwave tortillas for 45 seconds.
Scoop 1 – 1 ½ tablespoon of beans on each tortilla one at a time and roll into a thin taquito (about a ½ inch diameter).
Fry, 3 at a time, with tongs for about 4 minutes, turning every minute.
Place on plate lined with paper towel to drain excess grease.
Use sour cream and guacamole as dipping sauces.
YUM!

I detest the taste of oil, absolutely detest it and it leaves a horrible clingy type feeling in your mouth. Strange, as I smoother Pure margarine very thickly onto things![]()
Well, maybe you are better off. I am not a big fryer myself. But I do think olive oil has some health benefits.

Me too! I just use it in small amounts and unheated for it's health benefits. Also I really LOVE to eat olives themselves and used to buy unsalted Peruvian olives but they aren't available anymoremaya
I LOVE salted olives but avoid salty things in excess as well so I am really hoping the olives become available again soon.
Please know I am not criticizing you or anyone else who eats fried foods at all. I was simply commenting on *my* preferences. I LOVE deep-fried food but can't bring myself to fry foods! I also love fats in general, so much that I have stopped buying Earth Balance because EVERYTHING tastes better with it! I mean it, my family could go through a tub a week! We just have it in the house when I am doing a catering gig and that's it.

Anyway, I made chilli for my mum and sister, and my mum had never had guacamole before!!!! I had pinched the avocado from her fridge to make it and she was a bit peeved at first (in an extremely comical and rather tipsy sort of way) but she changed her mind when she tried it![]()

Something interesting: Even though avocados are fruit, each one has 25 g of fat! But it's the good kind of fat, so it should be ok.
Sometimes in "mixes" for making guacamole I see dairy. Is it common for guacamole to be nonvegan? Because in my cafeteria at school there is usually guacamole available as a condiment, and I always assumed that it's just avocados, spices, etc. I should probably ask to make sure it's vegan. God, people put dairy in EVERYTHING these days... it's ridiculous.
I sometimes like to add cumin, oregano and paprika.
We used to live on the border way down south in TX and we'd eat in Mexico on the weekends. They'd make this to die for Guacamole salad...

If you want your guacamole to last longer then blend in some spinach leaves, it stops it from discolouring so it can last you a few days.

I make Guac several times a week... I usually make just 1 avocado at a time, because it doesn't keep well. Though, if you leave the pit in the guac after you make it and cover it very tightly, it can last an extra day!
I take...
1 nice sized avocado
2-5 cherry or grape tomatoes (depending on size, or a 1/4 of a med/lg tomato)
1 small glove of garlic, crushed
a nice small handful of cilantro chopped
2-5 "rings" of jalapeno chopped (more or less depending on spice level!)
nice squeeze of lime, lemon or even tangerine works if that's all you've got.
pinch of salt & pepper
pinch of cumin (optional)
mix together.... I like chunky guac, but feel free to make the avocado smooth and then add ingredients...
Some places add sour cream for texture. Or really to make it cheaper, probably. I would definitely ask, I've found a few restaurants in town that do this.
My quick guac is mashed avocado, lime juice, dashes of garlic powder, salt and pepper. Maybe dried cilantro or hot sauce.
For more propper (planned) guac I'll add chopped tomato, onion, real garlic and fresh cilantro.
