I have seen Seitan in specialist health food shops, but not often and not recently. Though I haven't been looking for it.

It is possible to make your own. But having done so once I now classify making seitan by hand as one of those things that life is too short for.

Braised wheat gluten. To make it you take some flour, and make it up into a dough by adding water. You then start kneading the ball underwater, changing the water as it becomes cloudy. You keep on doing this until you've washed away all the starch and the water stays clear. In my case this took about two hours. The remaining sticky (and now much smaller) ball is the gluten from the flour. You can then cook this in a flavoursome stock to give it some flour. The resulting product is a chewy solid foodstuff that can be used as a substitute for meat.

I haven't made it for some years so the details of the recipe above may be inaccurate. But it should be close enough to give you an idea of what it is.

    Cheers,

Available in health shops, althoigh I've never seen in in Holland and Barrett.

I have always wondered whether it is particularly healthy or nutritious?
