    Default Making your own tortellini

    Is there anyone out there who makes their own pasta? If so, how difficult is it? I'd be particularly interested in making tortellini. Can it be done by hand without a pasta machine?

    Yes, it can be done by hand (what do think all those old Italian grandmothers did?) I tried it once years ago and you need a lot of flour, a large flat surface that you can roll the dough on, and upper body strength to get the dough thin enough with a rolling pin. It is a lot of work without a rolling machine. I worked in an Italian restaurant when I was younger - making pasta would have been miserable without the hand-crank roller.
