I think rocket is known as arugula in the US, that's what Wikipedia told me, anyway.
I'd also like to say that I'm really enjoying that chocolate peanut butter that I bought. It's very nice with mashed banana!

My current favourite is peanut butter and carrot preserve, yes carrot preserve, a find in a Middle Eastern shop. Very sweet and very bright orange.
Hummus and grated carrot is also good.
peanut butter mashed with banana (chocolate or not) is indeed a great sandwich filling, Roxy.
Mashed strawberries are also very good.
the only sandwiches i eat at the moment are peanut butter and it's boring
i have absolutely no imagination when it come to food so please give me all your ideas for vegan sandwiches i would be vey grateful

Do you like marmite? try that with cucumber.
Or just salad. Maybe smoked tofu sliced thinly, topped with sun-dred tomatoes and pesto? Vegan pate (such as Tartex, sold in tubes from health food shops), perhaps with some salad or tomato. Or how about good old reliable houmous?

toasting the bread lightly before you pop in the filling makes for an oh ever so slightly more interesting sandwich experience, don't you know.

my fave sandwich is vegan sausages with one slice of bread covered in wholegrain mustard, the other covered in mayonaise and the sausages covered in ketchup, how many condiments can one sandwich have?!
If anyone has had the pleasure of trying this cheese, they know exactly what I am talking about It is fairly new and not readily available to the public, at least not in the US. It is called Daiya (mmwha I love you) It is the only cheese that I have ever tried that actually melts, stings like real cheese, and is like a heavenly vacation for my taste buds!!!!! I absolutey love it! I hope they make it available for all of us veg heads to buy soon. My first unforgettably euphoric experience was a pizza joint called Zpizza! Berkley Vegan you rocked my world

I swear the more I have this the less I chew. In a couple days I think I'll just swallow it whole!
My favourite sammiches:
Olive/basil/rosso tofu (Taifun brand) or smoked tofu with lettuce, cucumber, tomato, Plamil egg-free mayo and tabasco;
Tofu-weiner or Redwood sausages with salad, Plamil mayo, yellow mustard and tabasco;
Houmous with sliced sweet peppers, lettuce, cucumber and tabasco (hmm there may be a theme here...!);
Peanut & sesame houmous from Eat, Drink & Be Vegan with same;
Mushroom & walnut pate from Veganomicon with salad;
Avocado, pine nuts, pumpkin seeds and salad, mayo, tabasco!
What can I say... I like spicy sammiches!
Favourite breakfast sammiches:
Redwood sausages, yellow mustard and ketchup on toasted bread;
Peanut butter and sauteed mushrooms (cooked with a little soy) on toasted bread (I have this one a LOT). Fried tomato slices optional but nice!
cheatin' chicken/ham/turkey/beef slices with cucumber and mustard *drools*
I am eating a peanut butter and chocolate frosting sandwich! Not very healthy, but soooo delicious! It reminds me a bit of nutella.
I saw vegan marshmallow (ricemallow) fluff in the grocery store the other day. I'm highly intrigued.
I haven't had garlic hummus on toast in a while. That's another one of my favorites.
And everything tastes good with hot sauce

My fave sandwich is based on the kick ass chicken sandwich in skinny bitch in the kitch book:
50 Grams Blended Silken Tofu (or 50 Grams Soya Yogurt)
2-3 Grams Curry powder
Dash of lemon juice
Pinch of salt and pepper
6 grams of nutritional yeast.
Mix these together until well combined in a bowl.
In another bowl;
50 Grams vegan chicken
20 grams red onion finely diced
some diced celery
All mixed together well
combine the 2 mixtures and spread on some vegan bread and you have a vegantastic sandwich
-Sliced avocado, sliced apple, hummus, "honey" mustard (yellow mustard+agave nectar), sprouts and/or spinach on toasted rye.
-Vegenaise, simulated bacon bits, tomato, lettuce.
-Leftover tofu scramble with ketchup
-Almond butter... alggllallmmmlllgggll (drooling noise)
Eggless egg salad, made with crumbled firm tofu, vegan mayo, salt, pepper, and dijon mustard

I'm lazy. I just blend some mixed beans and olive oil. Sometimes mustard. Then spread it on the bread. Tastes good though (:
Just wanted to share with everyone this fantastic cottage/cream type cheese I make using Kefir grains. They say that you cannot make kefir with soya milk but I have kept one going for over two years and have also shared the grains out to many friends. I have tried all different types of soya milk and the best one in Alpro organic unsweetened. you pour the milk onto the grains in a glass jar put kitchen paper over the top secured with a rubber band and leave over night. by the morrning it has gone thick. you then put this mixture through a sieve and leave the grains remaining in the sieve to start again in another glass jar. with the yoghurt mixture you can place back in a sieve lined with muslim and let it drain for a day which then leaves you with the soft cheese in the sieve and the whey in the bowl. the whey can be drunk or fed to your plants its like miracle grow! the cheese is great with salt and pepper or herbs.if you want a sweet version add algrave syrup and the juice of a lemon and whiz in a blender until smooth pour into ramikins its wonderful and yummy!
That sounds interesting Sueflower - don't think I've heard of kefir grains before but I just looked them up. Are the vegan kefir grains easy to get?

Thank you Sue - might try that although I'd better choose a time when I'll be sure of using them - I imagine you have to "feed" them to keep the culture going, do you?

I love veggie bagel sandwiches; lettuce, tomato, alfalfa sprouts, red onion, and hummus.
Toasted veggie subs; guacamole, lettuce, red onion, tomato, black olives, banana peppers, and rice cheese.
avocado, tomato, veganaise & loads of salt & pepper is my favorite lately on gluten free sunflower flax bread
Seeded brown bread, hummus on both sides, lots of salad, and salt and vinegar crisps inside too, always a winner!

I usually have an avocado and veganaise sandwich or sometimes I put guacamole onto a corn or flour tortilla and heat for a couple minutes in a skillet.
lettuce and vegan mayo on wholemeal..mmmm with some grapes at hand...delicious
