since christmas day i've been enjoying my luxury almond & cashew nut roast loaf (with herb stuffing) mashed into a sandwich with some sliced tomatoes and picalilli or sweet pickle.

yummy bean spread
stir together 15 oz can fava beans and 15 oz can garbanzo beans (or your choice of beans), 2 Tbs lemon juice, 2 Tbs olive oil, 2 finely minced garlic cloves. Bring to a boil, then reduce heat to low. simmer 20-30 minutes, occasionally mashing the beans. (optional- sprinkle in some cayenne pepper and/or diced chilis) Serve when not quite pasty yet. this is good on pita bread with tahini or vegan dill dresing, lettuce, thinly sliced red onion and tomato.

i made a kind of crazy concoction last night for dinner, sweet and savory, and i was a bit worried that it wouldb't turn out, but it was delicious! i am excited about this becuase i have been playing around with things lately because i hope to open a restaurant someday and write a cookbook.

I found a recipe recently for something that can be used to make grilled "cheese" It's a bit runny, but very good, and if you don't feel like getting a pan all messy with it, you could always toast the bread and put the stuff in the middle, since it's already like a melty grilled cheese. mmm. here's the recipe if you're interested:
12 ounces firm silken tofu
3 tablespoons Nutritional yeast flakes
2 tablespoons Sesame tahini
2 tablespoons Lemon juice
1 1/2 tablespoons Light miso
1 teaspoon Onion powder
3/4 teaspoon Salt
1/2 teaspoon Paprika
1/4 teaspoon Garlic powder
1/4 teaspoon Dry mustard
1
. Place all ingredients in a food processor fitted with a metal blade. Process until smooth, stopping every so often to scrape down the sides.
2. When smooth, pour into a storage container and cover. Chill for several hours to allow flavors to blend. Keeps for 7-10 days in refrigerator.
3. This has many uses…serve on toast, use in sandwiches in place of dairy cheese, use in vegan grilled cheese sandwiches, and more.
Plus it's good as a dip for veggies and stuff too!

Just finished munching away a huge packed lunch and still could eat more. I need too much food - it is getting a bit of problem.
Anyway my question was: Do you have any filling suggestions for sandwiches?
I am fed up of the mock meat slices and need something quick and easy.
Was thinking sliced tofu plus salad. Suggestions from the wise pls.
When I'm feeling really hungry I'll have vegan sausage sandwiches with some salad veg and maybe some hummus or other non-dairy spread - very filling as is falafel pitta bread.Blueshark

Refried beans and salad.
Chilli and guacamole wrap.
I like cooked tofu pieces (those marinated ginger ones) in pitta with salad and houmas loads of grated carrot. I also toast sunflower seeds on a frying pan and coat them in tamari and sprinkle them on too. Tofu is so good in sandwiches as its satisfying and you feel like you've had a good meal.
Actually I remember trying those tofu pieces in pitta last year, but the pitta kept falling apart. I guess I was putting too much in, or the pittas were too small.mew_76
Falafel sounds good - it is damn tasty and very filling.
Yeah, if the pita gets wet it falls apart. You can bring the pita stuffings in a sperate container and take the pita pocket in a bag, and when it's time to eat, stuff it. (As opposed to stuffing it in the morning and letting it sit all day in the pocket)

I love sandwiches! I eat at least one every day. I have peanut butter, or homemade hummous with cos lettuce, tomato and/or beetroot and brocoli sprouts, or soft "cheese" spread, or homemade beeny pate. I cut huge "doorsteps" of homemade (well, breadmaker!) bread. If you make your own bread, add whole-meal or spelt flour to white, you can also add seeds such as sesame, poppy and pumpkin.

If I have stir fry I mix the left over brown rice and veg together and put loads of tamari on it and stick it in the fridge then its like a rice salad for my lunch at work the next day. I like cold pasta and tomato and veg sauce too and wholemeal pasta really fills you up at lunchtime too. I get so sick of sandwiches...
I used to love the peanut butter from the health food shop (the one they put through the grinder while you watch) on bread, or with banana on bread...until I cut out peanuts *sob*
I also LOVE LOVE LOVE vegemite on a sandwhich. Nothing beats it. Although it's just not the same since I cut out my vegan margarine.
Plus, Vegemite is a rich source of B vitamins!!

Oh I read something on a raw food site, I can't remember the exact detail but because they give so many people food allergies and they are cooked nuts I decided to discard them. When I eat peanut butter it makes me break out too.

My favourite sandwich has to be avocado, tomato and spinach, maybe also with vegannaise or houmous if I'm feeling decadent. Otherwise it has to be peanut butter and either jam, banana or dried apricots. *drools*
Oh yeah, avocado rocks. We go with avocado, roasted red peppers and either grainy mustard or black olive tapenade as a spread. Why didn't I pack that for lunch???

it is tabitha i like hummous to, but im not a lover of fake cheese..i know i shouldnt say this but even when i was into dairy products i hated cheese! couldnt stand the taste. I will have to check out the fresh coriander though thankyou
