So, if you are eating them raw, you measure a serving out that way and if you are cooking it, you measure after cooking (as veggies loose water and shrink during cooking and the serving size reflects that).

Monday to Friday I eat: 4-5 apples, 3 clementines, 2 mandarins, 1 banana, 3 pears, 1 portion of grapes or strawberries, 2 portions of salad (lettuce, rocket, cucumber, beetroot, celery, radish & carrot). That's while I'm at work. When I get home I sometimes eat more vegetables, sometimes it's just nuts, seeds & dates.

I can't imagine eating 6-7 cups of salad in a sitting though
well let's see, I had potatoes, tomato, and 2 plums for breakfast, then cranberries, a 100% fruit leather, more tomato, a bunch of home-made applesauce(my fav!), carrots, salad, and some berries...that comes out to...probably 13!! Wow, i never knew I ate so much of these foods! It just comes so naturally now!

I love salad too, but 6-7 cups of mixed veggies and greens equalls a LOT of chewing and a LOT of bulk in the belly! That is the size I usually make for my family of 3 to eat with meals (a large mixing bowl full, so we each get about a cup of mixed greens and then a cup of mixed various veggies like shredded beets tomato, onion plus sprouts).foxytina_69
i know, but for some reason i can eat alot of food in one sitting :| its wierd! the most of salad ive had is about 5 cups in one sitting WITH other food, so i wouldnt be surprized if i could eat 6-7 cups by itself.

That being said, I might have one for lunch today since I have lots of veggies.

Sorry Sweetie, you are not overeating by any means and I didn't mean to imply that! I am just commenting because I am wondering if you have measured correctly because the way you lay it out it looks like 3 small meals in the "what I ate today" thread and here, it looks different. Even if you ate 20 cups of salad over a few meals, it would be a good thing! Keep eating lost of healthy foods, you growing girl, you!

Have you had arugula, mixed baby greens, mizuna etc? I eat them because I know they are really good for me I add chopped cabbage, beans or legumes (chickpeas work nicely) seeds, nuts, shredded beets and carrots and red onion and a flavorful dressing so it's never boring.
I feel the same. Conscious can u post some of ur yummy homemade dressings. The only one I ever use is Annie's goddess dressing and it gets boring after awhile. Ur dressings always sound so yummy

You all are such an inspiration! I try to get in 5 servings/day and feel proud when I accomplish that (I'm a recovering junkfoodetarian). I'll look forward to seeing how well everyone is taking care of themselves and hope to join in on the fun as my recovery process continues

Plain potatoes shouldn't count in the total. They have been shown to lack the protective effect of nonstarchy vegetables in most studies-nutritionally they are more like grains than most other "vegetables." Sweet potatoes and winter squash do count, however.
Totally agree with Concious Cuisine, salads are wonderful when they include the more exotic greens: radicchio, arugula, mizuna, etc. They are expensive but can totally transform the mundane to the magical.
My salads are completely delicious. I crave them. It helps to use lots of different veggies including lots of different types of leaves--a little bit of 20 things is great.
Each salad is a symphony of different colors, flavors, and textures.

Mushrooms in my gravy (0.5--I ate LOADS and I left the mushrooms in whole)

Actually, for the purposes of this thread alone, they *do* count. There are things people eat which I feel have little value (corn, potatoes) but I still feel those things are better than eating pasta, bread, cereal and the like which so many vegans seem to eat in excess instead of vegetables and so it's still a huge improvement.marika5
Believe me, I have pondered starting a thread about the healthiest eating called "I ate these SUPERFOODS today!" and listing acceptable foods (oregano, blueberries, ginger, lemons, kale, broccoli, arugula and so on) but in order to more encouraging and accepting of what some consider baby steps and others consider LEAPS and BOUNDS, 10 servings of varied veggies and fruits is a god place to start Be on the lookout for that thread, after people have become accustomed to this initial change
I feel this thread is becoming a bit anal. Poor old spuds, me an my Irish ancesters feel not counting them as a veg a bit harsh I feel the odd spud does me good especially oven fries . God I'd die without them .
Anyway you will be pleased to hear that I didn't eat any potatoes today,but the ol' diet went to pot a bit. Here goes:
