    Default In Need of a Cake Recipe to sell at a Restaurant!

    OKay so I mentioned on another thread possibly wanting to brng a slice of vegan lemon coconut cake from Bobahouse into the restaurant that I work at, Midtown Dessertery and Cafe and putting it out as a taster in our bakery section. So I brought it up to my manager tonight. He said that if I could get a recipe to go along with it then we could try it out and he would give it to Luce or whoever bakes all the cakes and see about making it!! How sweet would that be?! Getting a vegan cake ina normal restaurant who makes practically nothing vegan. I think that would be quite an accomplishment!

    Got any good recipe ideas?

    Vanilla Sponge cake with carob chips and pecans

    Ingredients.

    2 cups of unbleached self raising flour

    1 teaspoon of baking soda

    1 teaspoon of half a cup of raw sugar
    1 cup of sunflower oil

    1 cup of soya milk (or possibly a little more to get a good mixture)

    2 teaspoons of natural vanilla extract

    quarter cup carob chips (or more if you like!)

    half a cup of pecan halves

    Oil your cake tin and preheat oven to 360F. Mix together your dry ingredients of flour, sugar and baking soda. Make a well in the middle and pour in the oil, soya milk and vanilla - mix well. Pour into cake tin and then sprinkle on the carob chips and arrange the pecans on top. Bake for about half an hour or until cooked in middle (insert a knife or skewer into the centre of cake and if cooked it will come out clean)
