I am having an early dinner this afternoon, because I have to leave for my Yoga class at 6pm.
Today dinner is going to be a Portobello Mushroom Burger - yum! Grilled mushroom on a bun with some mayo, vegan cheese slice, red onion, tomato slice. ketchup and mixed leaves. On the side I'm going to have some baked vegetable chips.
I love them. So good. I like how they aren't very chewy-meaty. I had mine with ketchup and mayo. Next time, I might chop a burger up and make a "chicken salad sandwich" with it (with mayo and celery).

LOL roxy. mmmm that does sound REALLY good. i should try that. what do you do with the mushroom? just wash it and grill it and then its done? do you season it or oil it first?

Foxy, I just brushed it with a little bit of Tamari, and cooked it in the pan on a low heat, for about half the time, I left the lid on the pan so it got steamed a little bit as well.
Last night I made an awesome spicy split pea dahl soap with roasted peppers, and chick pea pancakes. The soup was especially good, although I didn't have all the necessary (I cannot find fresh coriander here - grrrrrrrr!)

did you roast the peppers and then put them in the dahl or did you serve them separeately? I have done dahl with red peppers in but I never thought of roasting them first. I just stir them around in oil with the onions until they are starting to soften and them add the lentils.
For dinner yesterday we had potato, green lentil, coconut and pak choi curry with brown rice.
I cooked the curry on Saturday, enough to last 2 meals. By yesterday the potatoes were disintegrating as I used the wrong sort, floury instead of waxy!

I roasted them in the oven and removed the skins, then cut them up quite fine and added them the soup more or less at the last minute. Then the recipe called for a sizzling of crushed black peppercorms, cloves and cardamom seeds, bit I didn't have any of that :-(. The split peas were added to mustard seeds fried for a few seconds before adding a chopped fresh tomato, an onion, chiili and garlic. Then I added turmeric and paprika beforeadding the split peas and water.
I cooked soem firm tofu in stock and purespread then added some chopped fresh tomatoes & fresh spinach leaf..just for a few seconds,drizzled with oil..i do that when i realy am feelin lazy!Lol
For lunch I had vegan fettucine alfredro (from one of Stepaniak's cookbooks) with brocolli. I also fixed some chocolate chip cupcakes and chocolate frosting from cherry brook kitchen mixes...YUM

I don't know what to make. I have a lot of veggies that need to be used up before they go bad, so I might make a stir fry...even though I don't like stir fry. What else can I do with a ton of cauliflower, broccoli, and peppers? Can they be frozen?
Fiamma - Have you tried growing your own coriander? I don't generally have green fingers and I still managed to grow fresh coriander from some seeds - they weren't even designed as growing seeds, I'd got a big batch of cooking seeds in the market and just thought I'd give it a go!
I am making a version of peas paneer with yellow split peas, red lentils, frozen peas, a tin of tomato puree and a carton of our locally made Gateshead Tofu.
Also included sunflower oil, turmeric, cumin, coriander, ginger, chilli, garam masala, garlic and chilli pickle, and a bit of tandoori spice mix.
There should be enough tor tomorrow too!

make cauliflower, broccoli, and pepper curry! Mmmm. A few onions, some oil, some spices, and there you go.
Leftover cooked curry freezes well once cooled. You can make a large quantity and then freeze separate portions.

all those veggies are really nice raw so try chopping them up small (cauliflower and broccolis in tiny florets, peppers in small strips or cubes), and making a salad. You will need a salad dressing.
It won't keep of course but if you have a fridge it will stay fresh for a few days if you cover it in an airtight way.
I eat curries at least once a week, sometimes I have them every day, and I could not imagine life without curry!

tonight i plan on having beets, tomato fried rice and mini pizzas w/ soy milk. i dont know if ill beable to eat that much but ill try so i can get all my protein.

I am feeling quite lazy this afternoon. It's my day off and I've already done heaps of work today and now I don't feel like creating work in the kitchen I think I'll have some home-made hash browns (with a little chopped red pepper and red onion in them) and a cup of maple baked beans.
hmmm i dont know what ill have dinner tonight. probably either pasta and toast or pakoras if steev brings them home for me cause he said he was going to bring me home a treat tonight but i dont know what it is.

I've never tried making my own beans before. For some reason, I thought you needed a pressure cooker for those, and not only do I not own a pressure cooker, those things actually scare me!!

tonight we are having stir fry veg with sesame oil and soy sauce, with home made guacamole and salsa in tortilla wraps.
strawberries and swedish glace for dessert.
chocolate and cup of tea for later.

Can I eat at your house, Tina? I love breakfast for supper. I feel like pancakes tomorrow... Hmmm. What flour did you use to make them gluten free? HIAV has a buckwheat pancake recipe, and I believe buckwheat is g-f.
haha if you didnt live so far away id have you come over! buckwheat is gluten free. thats what ive read anyhow! all i used was brown rice flour, with this recipe, instead of the normal flour it calls for:
