    yesterday i had a huge and amazing lunch!

    I had mock chicken carolina bbq on a ww dinner roll and lots of steamed broccolli. also had lots of free samples in whole foods bc I think they just got their shipment in! haha it was exciting. (side note - there was more mock chicken bbq that I had besides what was on the roll)

    Today we will have chilli, I made it yesterday and I have tried it.
    I fried 3 chopped onions in some sunflower oil, then added some chili powder, some turmeric, some black pepper, ginger powder and some Fern's hot garlic pickle. I then added 2 red peppers, 2 sticks of celery, and 2 carrots, chopped. Then a cupful of quinoa, a cupful of dried aduki beans and a cupful of dried black eyed beans.
    I added water by approximating. Then I cooked it some more, then I added some carob powder and tomato puree, and some salsa, adding more water as the beans cooked.
    I served it with rice, apricot spread and vegan sour cream. Today I may do some extra vegetables (green beans and sweetcorn) to go with it.

    I'm planning on a big salad (have to use up some lettuce before it goes bad), a baked or mashed sweet potato, and maybe some hummus if I feel like making some.

    mmm tigerlily i envy you. all ive been craving lately is salad!!! i so badly wish we had some fresh veggies!

    tonight were going to have tacos and veggie/bean/lentil/rice soup. mmmm. my stomachs growling just thinking about it.

    most likely food from the pit. i always either get food from the dining hall or go to whole foods and i dont think ill really have the time for whole foods tonight plus im trying to cut back on spending! but the pit gets really monotonous - its pretty much plain salad and pretzels or now sometimes sauteed veggies and pretzels. occasionally they have a veggie soup. so boring!

    strawbs - I had heard about it - its the spinach one, right? But I have yet to see it at any whole foods! so I havnt tried it yet. they still only have the no cheese one. ohhh welllll.

    i had a really good dinner tonight that I havnt had in ages from our a la carte pay separately dining hall. a real big wrap w. hummus, lettuce, tomatoes, and cucumbers. w. a pickle. and 16 oz of ministrone soup. I hate it at the new cafe section in the library (aka just a place for people to eat and study w/o bringing food into the actual library off of the 24 hr study rooms)

    me too tigerlily! and yes, we are having pizza lol. were having pizza with leftover taco meat, sundried or fresh tomatoes, onions, corn, and sprinkled with spices and nutritional yeast. mmmm. so it will be kindof "mexican" pizza!

    I don't know.......

    It'll have to be an early dinner around 4.30pm though, because I have my Yoga class at 6.30 and I don't want to go on a full tummy. And by the time I get home it's 8.30pm and to late for dinner when I have to go to bed early-ish.

    Tartex is a vegetarian (well vegan) pate. You buy it in a tin, on the shelf, and after opening it, it has to be refrigerated. You should look for it there Witchy - I'm sure you can buy it in England.

    Aw I'm jealous - Chicago has everything! At least my whole foods has all sorts of vegan food that no other one does - like the good mock chicken salad, mock crab cakes, vegan lasanga, vegan banana nut muffins, oh it goes on!

    And thats okay love no worries I understand completely seeing as my life seems to revolve around reading and more reading.

    tonight we are having baco rostis:

    you need;
    jar of bacos (if you cant get these you can substitute by frying vegan rashers and chopping up small)
    mashed potato
    onion
    fresh parsley


    chop the onion finely and gently fry till soft.

    add onion, parsley & s&p to mash and mix in - preferably leave for a while to solid up.
    shallow fry till golden

    we are having these with roast butternut squash, roast zucchini, roast garlic and steamed asparagus
