I need something to make tonight, I have to rush off to French class so it has to be quick and I need two portions, one for tonight and one for lunch tomorrow. I'm thinking of trying cauliflower cheeze which I haven't had since I was pregan.

It's yummy and soft but make sure you use enough liquid. My fave polenta is the Polenta Rancheros from Vegan Brunch and the Creamy Grits from Vegan Soul Kitchen.
