    I just had a whack it all together on a plate dinner, but boy was it tasty
    it consisted of baked beans, mushrooms, spinach, eggplant, tinned tomatoes, and 2 mini corn fritter things, kinda reminded me of the ol' fry up breakfasts, but so much healthier as i don't use any oil

    Ohh, how do you make the corn fritters without oil. I love these things and would love to know how to cook them healthier!

    I got dragged to a Weatherspoons pub at lunch, but I had a mushroom dupiaza, poppodums, rice and mango chutney. I THINK it was actually vegan!

    a corn fritter is kinda like a pancake i guess its corn flavoured and has little corn peices in it, i guess you could have it sweet or savoury, i like mine savoury coz i'm not a fan of the whole veggies as sweet thing (like weird canada people who put syrup on bacon and eggs *ewwww*) lol

    I cheated a bit though coz i bought one of those shake and make packs , where you just add water to the bottle and shake it up, then i used a non stick fry pan so avoided downing them in oil which works for me, just make sure the pan isn't too hot or it will burn in like 2 seconds, i learnt that the hard way , lol

    Maple syrup on bacon is like the best thing EVER!

    Mmmm...I always cook my veggie sausages in maple syrup, it is soooo good. Maple syrup goes really well with the sage flavor of sausage and the smokey flavor of the bacon. It actually is really savory. They also flavor bacon/sausage with maple a lot here too, so maybe it drills it into us. And people baste hams in brown sugar.

    Do you like carrot cake or grilled sweet potatoes w/sugar? Some veggies are just so sweet on their own.

    Sweet potatos with sugar!!! i have never heard of that, geez you don't realize how far away australia is until you hear something like that, i like sweet potato mashed or in currys, lol, when i went to canada a tried pumpkin pie and it was the grossest thing ever, lol, i like my pumpkin roasted and drowned in gravy... mmmm
    I do confess though i did used to like carrot cake, so maybe some vegetables can be sweet, i'll have to try the maple sausages...

    I wonder what other crazy concoctions(sp?) are eaten elsewhere in the world and not hear that just sound crazy to me...???

    I have just done 3 nightshifts (thank god that's over and done with).

    The first night I took a multigrain breadroll and some other ingredients (Yves veggie turkey, tofutti mozarella, alfalfa, spring mix leaves, tomato) and made up a big sandwich which I had with some veggie chips.

    The next 2 nights I took an Yves Thai Lemongrass "Chicken" bowl, to heat up in the microwave, which I ate at the front of the store, because there was no time for a break.

    Ugh - there's one for my "cons" list Tina - ugly night shifts until 11pm/12am

    To make corn fritters you just make a pancake batter and add fresh corn kernals enough to make it thick and any spices you like eg chilli or cumin or whatever and cook in frypan or bbq.

    To make fat free just use a light spray of oil.

    Homemade pizza is our fav dinner with lots of mushies and capsicum.

    Tonight we had fried temphe seasoned with chili powder, salt & pepper, garlic & herb roasted potatoes, carrots & onions, & steamed artichoke with vegenaise/spicy mustard dipping sauce.

    claire, ive always loved drizzling maple syrup on bacon/sausages and now i like to put it on my hashbrowns.

    i also really love pumpkin pie. LOL. mmm and carrot cake. *drools*

    yesterday i made this great chili sin carne with courgette, red bell pepper, kidney beans, onion and garlic, and lots of tomato it was soo delicious. i served it with mashed potato - soo good. and i made enough, so that i could freeze some yummie.

    yesterday i made a fab pastasalad w/ radishes, cucumer, tomatoes and home made parsley-pesto: pine nuts, parsley, oil, garlic, lemon, salt and pepper.
    and a really nice hot potato salad: soy meat, potatoes, red bell pepper, courgette and mushrooms and of course garlic

    it was really yummie, even my boyfriend thought so

    Raw lasagna - a combo recipe taking different components from different recipes (zuccini noodles, spinach, cashew/pine nut cheese, basil pesto, sun dried/red pepper marinara sauce)

    Arugula and sprouted lentil salad with orange, raspberry dressing and hemp seeds

    Parfaits of chocolate mousse (avocado, date, chocolate) and vanilla sauce (cashew, vanilla, agave nectar)

    Wow Diane, that sounds delicious, i wish i could motivate myself to try some raw recipes, they all seem so complicated though (other than salads ) maybe i am just lazy...

    Vegan bacon bits, foxytina? Where oh where did you get those??

    Last night I discovered the wonderful creation known as tofu crumbles. I put it in my spaghetti sauce, and it had the same consistency of ground beef, it was absolutely fabulous. I will definitely be making tacos, sloppy joes, etc with this stuff! YUM!

    i had potatoes with a mushroom sauce, and a salad with rucola, baby spinach, cucumber, some really nice tomatoes, pumpkin seeds, sugar peas, avocado and a mustard dressing. and then my boyfriend and i shared an artiscoke. soo good. and now we're gonna have soya latté and some watermelon.

    I had a plateful of pasta arrabiata. I used some SojaVollkorn BIO spaghetti (MORGA). It is a wholemeal soya durum wheat pasta. Like most pasta, it doesn't have much of a taste, but it has the right smell and the texture was just right.

    I mixed it with some Barilla Arrabiata sauce and ate it off the hob. Also had 4 slices of bread.

    I had stir fried carrot, spring onion, red & green capsicum, courgette and home grown mung bean sprouts. Cooked in stir fry oil, and added soy sauce, sesame oil and sesame seeds. Wrapped in rice flour pancakes with some hoi sin sauce.

    Tonight we had Flaky mushroom roll with mustard cream dressing and spicy potatoes with spinach.
    Yesterday our veggie and vegan group went out for a meal and I had garlic mushrooms, curry and then baked peaches with vegan ice-cream.
    My husband had courgette soup for starter and then stuffed peppers.

    I do mine in a plastic bottle that I cut in half and put a peice of cloth over the lid bit. Then I turn it upside down and put it into the bottom half of the bottle.

    I soak my beans in water for 24 hours then put them in the top bit and rinse them 2 or 3 times a day. The peice of cloth over the lid stops them from falling through but allows the water through so it collects in the bottom half of the bottle.

    I just sort of made up my own way of doing it, it works well enough

    Last night we had potato salad which I had made with new potatatoes, spring onions, sunflower seeds and pumpkin seeds, with dressing of Udo's Choice, vinegar, and Plamil mayonnaise, with Realeat Fishless Fish Cakes, followed by stewed rhubarb and dates with Swedish Glace chocolate ice cream.
    We don't normally have dessert but the main course was a bit small so I served dessert too.
