    Lunch-veggiedog with sprouts, ketchup and mustard, handful of mac nuts, another granola bar.
    Dinner-cabbage, carrot, onion spring rolls, tofu veggi pad thai type stir fry.
    Desert- soy ice cream

    plain home-made soya yoghurt w/ camelina oil,
    a large 'kind salad' (it's a really tummy kind salad =) and some quinoa w/ 'fried' onion, carrot, broccoli and corn (it's not really fried as i make it in a teflon saucepan w/o oil and iwth water instead... ), coconut milk and spices. it was really really delicious.

    I don't think there is any shame in eating much. I used to eat loads, really really loads. unfortunately, my body didn't like it...:/. but everyone's metabolism is different (and the younger you are, the more efficient it tends to be), so you need to adapt to YOUR needs. if you need to eat more than other people here, do it and be happy about it!

    btw, i just ate 3 oranges and quite a bit of tahini... so add that to my list . tahini cravings have ravaged me lately, strange...! just a pity it has salt added, i'd like it better without. it's coarse and quite dark. and organic. yummy!

    Hey, I eat THREE times as much as what people post here so don't feel bad!

    This thread is intended to be a place to post for those who eat BALANCED, healthy, nutrient-dense days with adequate calories needed to nourish thier bodies.

    Now, we are all different, but a vegan has basic needs and that includes making sure to get enough protein, B-12, calcium, antioxidants, and plenty of vegetables in addition to beans/legumes, fruits and whole grains.

    Please, take good care of yourself! Allow yourself to have fun with your eating and eat enough calories and a good variety of foods!

    I don't intend to make anyone uncomfortable! I certainly don't hold back eating, and perhaps the way I write up my food seems to make it look like it's little.

    Please don't hold back! I love seeing all the things people eat, there's really not too much when it comes to healthy eating (IMO).

    LOL!! I certainly don't eat mouse-portions of food. CBF writing how many cups of grapes, or how many handfuls of almonds etc...I never really take notice. I do know that I am never hungry though

    I'm getting worried now - do you guys think I don't eat enough? Because to me it seems enough, but I used to have an ED and although I think I'm well over it, maybe I'm still judging my food intake wrongly?

    Heres what i ate today:
    breakfast- strawberry cultured soy and a piece of whole wheat bread
    lunch- an orange and some edamame
    dinner- veggie burger on one piece of wheat bread with hummus
    dessert- cultured soy frozen yogurt

    i have a few questions about my diet... because i think that it is healthy but any charts i look at say that i am under my calories... but the question is, if i feel healthy, dont have issues with food, and always satisfy my hunger why does it matter if i am not getting at least 1,200 calories a day? i feel happy, healthy, and thriving (thick hair, and nails strong as iron)- i have loads of energy and work out every day. so is it really affecting my health if i am averaging 900 calories a day??

    i hope this post didnt make anyone uncomfortble, or trigger anyone, i'd just like a bit of advice.

    i'm sure you were making a more general comment, but as it came just after my post on what i had eaten, i take it that that made you feel uncomfortable. i definitely didn't intend for anyone to feel uncomfortable, of course! but i'm sorry if it did. won't post my eatings (thopugh no worries anyone, i know that what i eat is enough and healthy for me)

    anyway, what WAS the intention of this thread if not posting the healthy things one has eaten?? i thought it was a 'what did you eat?'-thread, just in a spirit of wholesome foods...?

    Don't forget the fat! The vegan diet needs fat for us to be healthy too and sometimes we have to be careful we are getting enough. Nuts, Avocadoes, Oils, nut butters, vegan margarine, pumpkin seeds, sesame seeds hemp seeds, sunflower seeds, vegan cheese ...what else?

    (cauliflower, green beans, carrot, pumpkin, corn etc etc)

    Snack

    Some organic grapes

    1 piece organic spelt bread, toasted with 1/2 mashed avocado
    half a handful of almonds

    Dinner
    Steamed Vegetables:

    Blueberries with ground flax sprinkled on top

    Salad - romaine, spinach, cherry tomatoes, snow peas, red and orange pepper, cucumber, broccosprouts, sunflower seeds
    Steamed broccoli and cauliflower
    Veggie soup - celery, carrots, zucchini, onion, lentils

    Another apple

    Veggie stew - lots and lots of tomatoes, carrots, celery, onion, red and green pepper, eggplant, zucchini
    Brown rice with a couple tbsp black beans

    I dont think it was just at you ukahela. I dont eat a huge amount myself but i am happy with what i eat. I have eaten around the same amount for 11 years and i am fine so i dont worry about the quantity just that i am eating a fairly healthy diet.
    I though that the thread was for a people who eat a healthy diet to but i think some people think you have to eat more so you are getting all the vitamins and minerals you need but some people cant eat as much as others so i think you can only do your best. I dont think anyone here is trying to make people who eat small amount feel bad, its just that they want to make sure everyone is looking after themselves.

    mm, you're right. anyway mineral and vitamin needs, as all other nutrient needs, are relative to each person's metabolism, activities, size, age, health etc etc.

    i just wish people would feel good about what they eat because that food makes them feel good, not because of how it compares to what other people eat..

    maybe it would be a point of not listing serving sizes in the thread, just saying what kind of things people it? if it really does make some people uncomfortable to see others eat less (or more!).

    ironic that usually i used to be the one (or one of the people) in most situations to eat the most, and people being really astonished at the amounts of food i could gobble down!

    35% of caloric intake is too high according to all the American Doctors, even those who advocate the inclusion of concentrated fat sources in a vegan diet. That being said, each person must decided for themselves what works for them, which plan and which percentage of fats in thier diet meets thier specific needs.

    I try to get 1 tsp of olive oil a day and 1 tsp of flax oil, plus any other foods that might have fats in them on their own. I don't usually eat nuts as they upset my stomach. Is that enough fat? Or too much?

    CC, is a whole avocado a day too much? I keep saying 'only half' but I seriously can't help myself...it's too delish!

    Apple- mmm Eggplant, thanks for reminding me we have one somewhere.

    Artichoke47- not really, LOL. The Korma and Kidney Bean Stew were bought from a health shop..made by a woman locally (who uses rice syrup instead of sugar to cook things which I adore). The soup and steamed veggies were home cooked (but not by me lol).

    I find I need to eat nuts and oils most days or I lose weight (I can't afford to) and I get problems with low blood sugar.
    I have also read about the good things in nuts, brazil nuts in particular. They contain selinium.

    Here is my menu for yesterday as this is the proud to eat healthy threaad:
    Breakfast:
    A piece of vegan christmas cake my Mum made for me, some organic dates, some organic almonds and raisins and some cashew nuts, plus a large pot of leaf tea with Provamel soya milk (sweetened with apple juice and added vitamins and minerals).
    Lunch: A large ciabbata with pure margarine, hummus, tomato and some brocolli sprouts
    Dinner: Half a sutaki pie available from Get Real in UK

    and a huge portion of roasted organic root vegetables (scrub and chop potatoes, carrots, swede, parsnips, arrange on large baking tray, sprinkle with sunflower seeds, drizzle with olive oil and then roast in oven on 190 degrres celcius for about an hour until they start to go a little crispy) also a glass of apple and mango juice.
    Drinks:
    Tea with soya milk, barleycup, choco tea
    Can't recall having any snacks!

    Large salad (mixed baby greens like spinach, oak, endives, mixed red leaves, tomatoes, parsley, red pepper, broccoli florets, toasted seasme seeds and zatar spice, balsamic vinegar, lemon juice, olive oil) eaten with some pita

    Snack:
    Huge chunk of dark chocolate

    Supper:
    Oven-roasted veggies (white potatoes, sweet potatoes, carrots, zuccini, onions, mushrooms) seasoned with allspice and cumin, eaten with some ketchup and cranberry sauce
    Tabooli salad (parsley, bulgur, tomatoes, onions, lemon juice, salt+pepper, olive oil)

    Dessert:
    Cup of tea

    I'm not sure what else I'll have for tonight, maybe some applesauce with cinnamon and ground, and/or a piece of multi-grain toast.

    brekkie: overdose of vitamins banana, mango, pineapple, kiwi, orange, served with soy yogurt and sprinkled with coconut
    snack: 2 apples
    lunch: freshly baked seeded bread with hummus, carrot-celeriac-pineapple salad
    snack: orange
    dinner: millet with roasted veg (squash, carrots, swede, parsnips) sprinkled with nutritional yeast
    snack: soya hot choc

    i love applesauce and toast as a snack!

    today so far:
    toasted bagel with apricot butter, scrambled tofu, and a banana; strawberries; a large hunk of homemade bread with apricot butter, cooked chickpeas (seasoned and such of course ), lemon soyyogurt, a large orange; pickles (they's bread and butter pickles and unfortunately...quite addictive ), soy crisps (bbq flavor from trader joes), dried fruit; I dunno what I'm having for dinner, but we are going to Mexican with my grandpa, and I'll update (as long as I remember )
    lately i've been snacking a lot more and eating larger portions becuase I get hungry easily becuase I have started with Team in Training to train for a marathon in San Diego sooooo excited (that's the whole reason i put anything about snacking; i just want to tell people about the marathon because I am so excited!)

    Hey, where are the "beans and greens" ??? I was not able to do much cooking today, so I did the best I could! Tomorrow is a new day

    4 slices each pear, apple, blood orange
    12 oz. soy chai latte

    1 1/2 cups salad of romaine, tomato, red cabbage, carrots and cucumber
    1 cup brown rice
    4 oz. spiced seitan cutlet
    1 spring roll with 1 T. plum sauce

    1/2 a grapefruit
    1 papaya
    1 lime

    2 roasted potatoes with onion powder, garlic pepper, olive oil and nutritional yeast

    16 oz. raspberry juice/Kombucha tea

    1 cup baby carrots
    10 black olives
    6 whole grain pretzel sticks

    4 squares Tropical Source chocolate

    1 can of corn

    1/2 a gallon of water

    Breakfast:
    A piece of vegan christmas cake my Mum made for me, some organic dates, some organic almonds and raisins and some cashew nuts, plus a large pot of leaf tea with Provamel soya milk (sweetened with apple juice and added vitamins and minerals).
    Lunch: 2 pieces wholemeal bread toasted and spread with Pure, then 1 topped with carobella hazelnut butter, 1 topped with almond butter
    Mid afternoon snack: put 4 large satsumas in my juicer and drank the result
    Dinner was at my neighbour's: I made curry-fry onions in a little olive oil, add my special spice blend, add some water, then add chopped organic potatoes, parsnips, carrots (my neighbour's little boy scrubbed them clean for me as they were organic I didn't want to peel them) I then added some cooked kidney beans and rosecoco beans I had cooked separately, then some more water, and later some quinoa and soya flour. I added some salt and garlic pickle and trail mix near the end. I ate this with white rice and persian salad with lots of parsley my neighbour's friend provided, plus a pasta and aduki bean dish my neighbour had made. I had extra helpings as my neighbour's plates are not big enough. I think I ate some snot too as my neighbour's 4 year old girl was sitting next to me and coughing and sneezing wetly in the direction of my plate. I was also offered a glass of pure orange juice with my meal.
    I had my usual hot drinks throughout the day too. Its still cold here in England.

    Roasted zucchini and asparagus dipped in homemade marinara/basil sauce

    Sauteed veggies in water/garlic/ginger - kale, broccoli, bok choy, onion, red and yellow peppers, and zucchini mixed with brown rice and soy sauce

    Yesterday:
    B: All Bran w/ soy milk & 1/2 banana sliced
    L: avocado, tomato & lettuce sandwich. orange.
    S: $9.60 (AU) worth of cherries (Sydney cherries are too expensive )
    D: veggie soy burger from Lauries vegetarian takeaway in Bondi.

    Today:
    B: 2 slices of bread topped w/ avocado
    S: bottle of blueberry juice & a handful of almonds
    L: avocado, tomato & lettuce sandwich. white peach. 4 medjool dates.
    S: 3 medjool dates, peach & a banana
    D: I am so full - I have no idea. I am going out to eat. I want something light.
