I'm no expert, but I would have thought that it's simply because if you take in calories that you don't need, your body assumes that there will be a famine shortly (seen as you don't 'need' them otherwise) and stores it as fat in preparation.
I think the body is a lot more intelligent than the mind!
You'd think a vegan diet would mean we're all slim, bronzed Gods and Godesses wouldn't you?
I'm two stone too heavy and really need to shed all the weight before my sister's wedding. She's making me wear pink and I'm going to look like a wee piggy if I'm not really careful

I used to wonder why I couldn't tell my body to lose weight, they same way you can tell your arm to move.
That would be quite cool but I'm afraid we would all turn into the 'ideal' person and body, which would be ridiculous. No one would be unique.
Though it would be nice to see how my hair would look in certain styles- I could dread my hair, and then if I looked like a twat I could just tell it to go back to normal.

You're body wants to save the calories for future use. We didn't evolve in a situation of supermarkets and refrigerators, so your body is designed to maximize its metabolic efficiency and store excess calories as fat.

I found when i first went vegetarian that i lost just under two stone and as i slowly became vegan another half a stone. Now my body seems to have stabilized. But eating healthier does mean quality not quantity. As Dianecrna said it truely is mind over matter...
whenever i find that im unhappy with my weight i try to concentrate harder on the fact that food is nutrition...i try to only eat what i need for energy and health.
foods that i dont need, or arent nutritionaly valuble for my body i just cut out.

Have you ever seen that tv show called "You Are What You Eat"? It's pretty convincing when you see the results after about 8 weeks. I've watched a couple of the shows.

When younger I ate raw food only for two full years. I could eat anything I wanted, from the right group of things that where raw, I could eat as much as I wanted, and I ate piles of it, and I never gained weight, I lost heaps and was skinny the whole time.
i dunno, i guess i'm pretty lucky, i eat a lot just to maintain, but it's scary at the same time cuz as soon as i eat less i lose weight, and that is a problem for someone recovering from an ed...
