ohhhh i looooved baileys. what a perfect question because just recently i found a recipe for this!
here it is:
1 can of light coconut milk
about 1/2 can of Irish whiskey
1 scant shot of espresso
chocolate syrup and soy creamer to taste.
chocolate syrup recipe:
4 tablespoons cocoa powder
6 tablespoons raw sugar
8 tablespoons water
whisk together in a saucepan over medium heat until smooth. Finish it off with a shot of soy creamer to make it creamy.

That said, i used to quite like it too.
I'm sceptical of it working well with coconut milk, although i'd like to hear from anyone whose tried making any of these recipes and found it as good as the original

well actually, the person i found the recipe from said it worked really well with coconut milk she said her boyfriend was a bartender and came up with this as a vegan alternative.

well the taste comes from the alcohol...but possibly if u can ffind something fiery like it then it may work...and besides, it'll taste different, but it still may be really yummy...

You could maybe try an extract instead of the alcohol to taste? I don't know how this would taste, but I know you can buy rum extract at the very least.Tigerlily

I hafta say it's pretty sick () and I'm glad I made half the amount and only wasted 10cl of whisky on it not the full 20cl.
Does Baileys even have chocolate syrup in it? As suspected the coconut flavour comes through too strong and doesn't taste right. The coconut and alcohol aftertaste is like malibu, with sweet chocolate syrup in it.
I've seen several vegan recipes online based around these ingrediants, with the wording slightly changed.
I can see what the recipe creator is trying to get at - baileys is basically whisky, cream and flavourings. But coconut milk is really not a good direct replacement for dairy cream.

wierd. i never noticed coconut milk having that much of a flavour, especially light coconut milk.
BUT, i bet the recipe WOULD work with soy screamer instead of soy milk as it tastes like cream right? u should try that mr flibble!

i think you might beable to tigerlily. im not sure if the whiskey gives it its unique taste or not though. u should try it without the alcohol might taste like a vegan cool creamy coffee/mocha treat !

heres a "copy cat" recipe i found for baileys, but its easy to veganize, as long as you have a recipe for evaporated milk thats vegan. which i saw somewhere on the forum but cant find now!

well apparently its not, and i found this recipe to make either condensed or evaporated soy milk:
Put 3 cups liquid soymilk or rice milk in a saucepan.
Add 1/2 cup sugar or equivalent.
Cook over medium-low heat, stirring constantly, until volume is reduced to 1 cup.
Add vanilla to taste, and a pinch of salt.
Cool.
Store in jar in fridge.
For Evaporated Milk: Cook until volume is reduced to 1 & 1/2 cups. Omit sugar.

In Wales there is a drink called Merlyns which is similar to Baileys but not so sickly.
I must check my drinks cupboard for whiskey when I get home, I know I have the soya cream. I've missed Merlyns since becoming vegan.

Put all ingredients in the blender and mix. I didn't measure the chocolate syrup.. just kept adding it until it was chocolaty enough. this is soooo good!

Bailey's is actually made with whiskey, so here is an adjusted recipe (it's yummy and thick enough): 1 can of light coconut milk, about 1/2 can of Irish whiskey, 1 scant shot of espresso, and chocolate syrup and soy creamer to taste. This is one of those things you should just keep tasting until the proportions seem right.Chocolate syrup as follows: 4 tablespoons cocoa powder, 6 tablespoons raw sugar, and 8 tablespoons water whisked together in a saucepan over medium heat until smooth. Finish it off with a shot of soy creamer to make it creamy.

For vegan Baily's, why doesn't the recipe have chocolate in it? Seems like a recipe like this would work (based on a traditional irish cream recipe):
2 cans coconut milk
1 can coconut cream
1/4 cup vegan chocolate syrup
2 tsp instant coffee
2 TBS vegan sugar
1/4 tsp almond extract
1 tsp vanilla extract
As much Irish whiskey as you can stand
Blend all ingredients and let sit a few days before enjoying.

Here's my recipe:
To make vegan Irish Cream to keep in the refrigerator for mixing with other things, I use:
1 can coconut milk (full fat)
1 can coconut cream
1/3 cup powdered sugar (or more to taste)
2 cups Irish Whiskey (Bushmill's is best, IMO)
1 tsp. instant coffee (or 1 shot cooled espresso)
2 T. chocolate syrup
2 tsp. vanilla extract
1/2 tsp. almond extract
Combine all in a blender and blend well. Refrigerate in a tightly sealed container (jar, old whiskey bottle) and shake well before serving. Goes down easy and is GREAT 'on the rocks'.

i made some vegan 'bailey liqueur', well, it was creamy liqueur. but at least it doesn't have coconut, so for those who don't want the coconut flavour it might be worth trying. no coffee and the rest though (i though baileys liqueur was just cream liqueur? at least that's what it was when i used to have it! =)
take soya cream and heat it, stir in some syrup (i used molasses, i fond it tastier). take off the heat and mix well. let cool a little (alcohol evaporates at low temperatures already, i think around 79 degr celsius). add whiskey.
and that's it. very simple. i know some will say vulgar
