    Lightbulb Hallowe'en Recipes

    After hours trawling Google looking for some interesting things to cook for hallowe'en I thought maybe some of you guys have some tried and tested recipes you'd like to share?

    I attempted a pumpkin soup last year but it wasn't the best.

    I am at a loss this year can anyone help?

    Hello Daffodil!

    I've been on the same topic for over a week. My partner is vegetarian with allergies to milk & eggs and asked me to bake a few dozen cupcakes, cookies & a pumpkin pie for a luncheon/potluck he is having at work. I am the president of the honor society in my graduate program and I, too, have to bake something for my Halloween potluck. I am vegan so I am definitely going to be baking Vegan treats.

    My favorite recipe of all time is my pumpkin pie recipe (so low in calories, fat and carbs)!
    Ingredients:
    1 pack of firm silken tofu
    1 can of organic pumpkin puree
    1/4 cup stevia in the raw (you can use real rugar or brown sugar)
    2-3 tsp vanilla extract
    dash of nutmeg
    cinnamon (to taste)
    3 tsp ground flaxseed
    Vegan pie crust (optional...I avoid crusts and flour so I never use a crust)
    Directions:
    Blend all the ingredients in the blender or food processor. You may add a little water or soymilk to help blend the ingredients.
    The drier the mixture, the easier it is to bake.

    Pour onto baking dish sprayed with canola oil non-fat spray and bake at 450 for 15 minutes. Then lower the temp to 350 and bake for an hour. Let cool and garnish as you wish. Makes 8 slices at about 35 calories each. I'll be baking some later today so I can post pictures of my treats with recipes of what I came up with!

    hmmm not much response.

    im just gonna roast mine this year..... slice, smear with olive oil, herb, salt and pepper and whack it in the oven for an hour.

    should go nice with our spooky scrabble night to pick on.
