    Default Recipes for Portabella Mushrooms

    Ok..got a great deal on A LOT OF ORGANIC MUSHROOMS and am trying to find some good recipes to cook them up and freeze. I could use some help..with easy recipes. (I'm not that organized a cook...I usually just wander into the kitchen and just throw what sounds good to me together.)

    They are best grilled, cos they go all soft and juicy. My fave recipe is grill them lightly, then add all this:
    pepper/courgette or both, cashew nuts, garlic, parsley, breadcrumbs, splash of oil put in a blender together
    on top, grill until crispy and serve with salad and potatoes or a mixed rice. Really yummy.
    Or they're good as a burger substitute. A grilled mushroom with grilled red pepper, rocket and spinach salad and garlic vegannaise in a bun is delish.
    Mmmm, I'm hungry now!

    Wow that 'holy oil' sounds like a winner. I can try that tonight. Having fun getting ideas from those sites too. I can use a food processor right? Don't have a blender.

    My favourite way to eat them is to use them as a pizza crust. Just fry them lightly for about 30-60 seconds on each side, turn them gill side up and add pizza sauce, and toppings of your choice, then bake. It makes excellent single serving size pizzas.

    I like to sautee mushrooms in a little oil and season generously with cumin!

    Absolutely you can. If you have an immersion blender, you can use that, too.

    Mostly, I just put the spices and oil I want in a jar and whisk it well to combine. If I'm using a jar that has a lid to it, I'll pop the lid on well and shake away.
    It's vegan, which means it's vegetarian which means there's nothing unheathy in it. -- my guy trying to explain vegan junkfood.

    Hmm.. well i couldn't find a mushroom thread but maybe we could start one..

    Anyone know how to cook the pom pom mushrooms? They're big and white and fuzzy looking. I'm also interested in good enoki or shiitake mushroom recipes.. the word 'simple' is on my mind.. I am ALL about stirfrying lately. I can't get enough of it!!!!!
