    Lightbulb Peanut butter and chocolate delight!!

    Hi everybody!
    Is anyone looking for a perfect chocolate and peanut butter treat???!!! Because i've found it! These chocolate and peanut butter squares are so delicious! They aren't too sweet and they have a nice satisfying chew/crunch to them!! I found the recipe in Vive le Vegan by Dreena Burton, but sorta altered it. My family and coworkers LOVED them! They are also really good right from the freezer. And perfect to bring to parties!

    There are 3 parts to these squares...

    Ingredients:

    1. OAT BASE:
    1/2 c quick oats
    1/2 c multigrain oats
    1/2 c barley or unbleached all-purpose flour
    1 tbsp unrefined sugar (I use fine turbinado sugar)
    1/4 tsp sea salt
    1/4 tsp baking soda
    3 tbsp pure maple syrup
    2 1/2 tbsp canola oil

    2. PEANUT BUTTER CENTER:
    1/2 c natural peanut butter (I use smooth, but crunchy would be great too!)
    1/3 c unrefined sugar (fine Turbinado again..)
    1/2 tsp sea salt
    1/2 c plain non-dairy milk (I use Vanilla rice milk)

    3. CHOCOLATE TOPPING:
    3/4 c non-dairy chocolate chips
    1/3 c plain non-dairy milk (Vanilla rice milk)


    Directions:

    Preheat oven to 350 degrees F.
    Prepare oat base. (add wet ingredients to the dry ingredients and mix thoroughly in a large bowl)
    Press mix evenly into a greased and parchement paper lined 8x8 pan.
    Bake for 15 minutes.
    Remove oat base and transfer it to a cooling rack.

    Prepare PB center in a saucepan over medium heat.
    Stir until the mix becomes smooth and uniform. (but do not let it boil!)
    It should thicken to a creamy texture.
    Pour the PB mix evenly over the cooled oat base.
    Refrigerate for 15-20 minutes.

    Prepare the chocolate topping.
    In a small saucepan over low to medium heat, combine chocolate with milk, stirring occasionally until it all melts together.
    Pour the sauce over the oats and PB.
    Refrigerate again until completely cool and cut into squares.

    I made these last night and they turned out really well! I used soy creamer instead of soy milk. The base is a little startling in that it's not terribly sweet, but a nice contrast to the sweet of the toppings.

    Also, these were easy and fast. I made them while running back and forth bewteen the kitchen and living room so I could watch Eddie Izzard.

    oh i'm glad you liked them! have you tried them frozen yet?? i tried a new chocolate chip cookie recipe this morning... that unfortunately didn't turn out as great!
