I'm not from Vilnius, but as far as I know there is no real 100% Vegan restaurant. You can visit "Balti Drambliai" (http://www.club.lt/index/lt/vilnius/bars/catalog/?id=1), which is vegetarian place, but they should have some vegan food.
In Kaunas, second biggest city in Lithuania, is small restaurant "Arbatine". Everything is vegan and delicious, but sometimes they use honey.
Sorry, I'm not very informative
There is another member in this forum, who is from Vilnius. Maybe she will know more

Great news - a new restaurant has opened in Vilnius. It's called RawRaw (http://www.rawraw.lt/). You can get a warm soup or a baked paprika there but everything else is completely raw and vegan. Definetely worth trying.

I was there years ago and there was a Chicago style restaurant for pizza and such. Maybe they would make you something tailor made if it's still there?

I am not from Vilnius but I have heard that there is a restaurant called 'Vegafe'. It is mainly vegetarian but there are dozens of vegan options served as well. I have not been there by myself but I have heard that the place is really VERY nice and the food is super delicious. :}
