    it was my own recipe (if one can call it a recipe)

    im not good at following recipies, this was just an idea i had.

    all i did was make my tomato sauce (i used garlic, mushrooms, rosemary)
    reconstitute some tvp
    simmer the two together for a bout a half hour
    cooked the lasagnae noodles
    washed some fresh spinach
    used some left over lentils
    shredded a half brick of follow your heart 'mozerella style cheese'

    & layered it accordingly. (i did noodles, sauce/tvp,lentils, 'cheese', spinach & repeated)

    i cooked it for 35 min with a lid on top & 25 without.

    it turned out delish!!!

    Thanks for the recipe! I had been looking for one for lasagna...I might add some tofu, eggplant and some other veggies to it

    Is Follow Your Heart "cheese" good? I have tried some vegan cheeses and they were absolutely disgusting, so I've stayed away from them. But if this one tastes good and I can find it in the health food store, I'd give it a try

    it tastes good in things, i would never make a 'cheese' sandwich out of it tho.

    Today was the first time I cooked with leeks, and I made the yummiest dish! It was sauteed leeks, and then once they were soft I added a chopped tomato, tomato paste, dill, rice vinegar, tamari, firm tofu, and then drizzled with sesame oil and served over brown rice with a hunk of crusty bread on the side and steamed broccoli - magnifique!!

    I had the most delicious day in a long time. French toast, tofu scramble, kale, potaotes, fried onions....

    I thought I didn't either but I changed my recipe around. I used medium tofu instead of firm (less grainy, it seems), I didn't go cheap on the oil, and I loaded it with vegetables. I had more vegetables than tofu. I also had lots of spices!

    When I make tofu scramble, i use that nasty silken tofu in the asceptic box (the ones that don't need to be refridgerated). It turns out great! I wouldn't use that for anything else plain (allthough it does turn into a very creamy dip).

    I just had the best thing - curried red lentil soup! I didn't think I liked lentils, but it was amazing! I think I will be making dahl soon, I have been wanting to try it, but I wasn't sure.

    I am not sure, but the soup was yellow, it may have been from the curry, but it didn't look red at all.

    Yes, that's right! They are called red lentils but are pinkish-orange

    My mom's recipe is easy but I don't know the exact porportions (she doesn't either, she cooks by instinct not by formal recipe). I'll ask her about it. All it is is lentils, rice, and onions with water.

    I know this is totally unhealthy, but I felt like eating something sinful but fun tonight....so we had:

    Deep Fried Tofu with Chinese-style BBQ sauce
    French Cut Green Beans with Walnut/Sake sauce
    Adzuki bean-paste filled steamed sticky buns

    My hubby and I feel kind of sick on all the the grease and salt, probably won't do it again for a while, but I was feeling like I needed a good Asian-style junk food fix.

    I like mixing (well, kinda mashing in a way) rice in with the tofu scramble, and sometimes with some steamed broccoli. I found it a great substitute for cheese-n-rice or cheesy-broccoli caserole. (Steam the rice and broccoli separate from cooking the tofu scramble, then mix it all together, slightly mashing it so it stays together like a caserole does -- real easy!) Even the omni's I know like it. It's pretty amazing that it's not actually cheese in there!

    hmmm...I wonder why it tastes like cheese??...If I could figure that out maybe we could have some decent vegan cheeze for a change!

    They are one of the healthiest things to eat! I have been preaching lentils on these forums fo as long as I've been here for thier protein, iron, easy digestability, affordability and so on

    They are GREAT in pasta sauce (they dissolve and turn the sauce creamy-rich) and here's one recipe I've shared here:

    Tina's Healthy Kale Meal

    1 bunch kale, washed and sliced into thin ribbons
    1 cup brown rice, cooked
    1 cup lentils, cooked
    2 T soy sauce
    6 cloves garlic, chopped
    1 onion, sliced thin
    Splash of vinegar, lemon juice, margarine or oil, nutritional yeast and pepper as desired


    Steam the kale either in a steamer basket or in a small amount of water. Cook the garlic and onion in a frying pan in a small amount of oil, margarine or water. Next, stir fry until the kale and garlic together.

    When complete, mix in lentils and rice, soy sauce and vinegar, lemon juice, oil or margarine as desired, nutritional yeast and pepper.

    Eat it, it's good!

    There are a MILLION variations on this with spices and veggie of all sorts and it's so delicious each way!

    The other really yummy thing to do with kale and lentils is cook the above recipe but leave out the brown rice and serve the mixture with mashed, seasoned potatoes (SOOOOOOOOO good!). You can add any veggies you like to either of these

    I hope you get that to market soon!

    I usually make my tofu scramble with brocolli and red bell peppers, then a steam some red potatos with olive oil/cracked black pepper and mix that in too.

    Usually i use a seasoning mix, I like the one by Fantastic Foods - TofuScrambler. I tried one by Nasoya and it was awful!!!! I had to throw it out.

    And Wildflower, next you time you pick up some lentils, try green/brown lentils. They hold their shape better and are more versatile.

    Oh-my-goooodness, that sounds so good! I'm definately going to try that this weekend. It's cold and rainy - a great time for a bowl of hot tomato (plus tahini) soup!

    Home-made chilli.

    Decided to try something new and fry in water and not oil (excessively heated oil produces some nasties such as trans fats).

    It had onion, red and green pepper, green bits from a leek, courgette, celery, tin of tomatoes, tin of kidney beans, some ground cashews, chilli powder, paprika, reduced salt stock powder, mushrooms, with some oil olive oil stirred in just before serving. Everything other than the spices was organic

    Tasted incredibly good

    Best of all is there is enough left for another meal

    Yeah, I did. It was a pain. But the adzuki paste filling is a great way to go. The whole meal took me 1.5 hours to prepare!

    I had tempura (baked ) vegetables (taro, green beans, zucchini, carrots, sugar snap peas, onions) and green tea noodles with asparagus, broccoli, carrots, onion, garlic, tofu and many, many spices plus sesame seeds and nutritional yeast in a flavorful, lemony-ginger broth

    Earlier in the day I had baked tater tots with fresh salsa, kalamata olive bread with avocado-miso-jalapeno olive spread and kale with green beans, garlic and carmelized onions with many spices

    I eat these almost everyday but wanted to share!

    I made a sub sandwich with portabella mushrooms, red onions that were sauteed in garlic oil and topped with vegan moz. Ohhhh myyyy happy tummy. Next time I may add a few herbs though....or maybe hot peppers???

    I just tried this Pizza place that has an entire vegan menu as well as "traditional" one and I ordered a small individual bbq chicken pizza and it was yummy!

    It usually *does* have dairy and eggs and is often cooked where animals are cooked as well;That's why I make it myself

    I had the yummiest tempeh and veggie dish from the co-op! Wish I knew what they did to the tempeh...very tangy almost a light vinegar taste and lots of tomato too. Almost thinking of getting dressed and going back for more...almost.....
