    Default Yummy Orange, carrot and Lentil Soup - gotta try it!

    I have the best recipe - its tasty, nutritious and cheap!

    Orange, carrot and Lentil Soup

    2 large carrots
    1 pepper
    1 onion
    1 garlic clove
    1 tin of tomatoes
    couple of handfuls of red lentils
    1 small tin of sweetcorn
    couple teaspoons of paprika
    1 orange
    3/4 pint of veggie stock or just boiling water

    1. chop all veggies and especially slice carrots thinly or even grate them.
    2. Finely grate the rind of the orange. then juice the orange.
    3.Heat oil in saucepan and cook onions until soft
    4 a add carrots and cook for a couple of minutes
    4.b add pepper and garlic and cook until all veg are soft
    5. Add in tinned tomatoes
    6. add in red lentils
    7. add in boiling water or stock
    8. Bring to boil
    9. add grated rind and juices of orange
    10. add a pinch of salt, pepper and the paprika
    11. Allow to cook for 15 mins
    12. Add in tinned sweetcorn
    13. cook for another 5 mins or until lentils ar soft
    14. Serve with bread or crackers (or you can boil further to be a stew type meal you can have with rice)

    Sounds great, and it's all ingredients that I normally have lying around the house anyway. Those recipes are the best!

    yeh it does sound good! i have everything apart from lentils! could i use mung or soya vbeans u reckon?

    That's interesting, I was wondering if you could just skip the orange (long story) or put in other fruits instead.

    that is an ace recipe! using staples...i had to use up some ingredients today n followed this recipe ubt put soya beans instead and used tinned carrots..n fried in avacad o oil.

    It was delicious i took some of sugarmouses soup to work for my tea... loved it i hope you make some more x

    i didnt put orange in mine! didnt have any! guess it was more of a modification of yours Liz!

    hi liz, that was a great recipe - thanks. only, we really didn't like the orange! definately going to make it again but without the orange. oh, and we whizzed ours in blender and it was SUCH a nice texture! thanks, triona
