Haven't tried this yet but will try it asap as it looks amazingly sweet and delicious![]()
* Apple Carrot Red Lentil Curry *
Fry half a small onion with 1/2 tsp ground coriander in sunflower oil.
Then add 1 cup of rinsed red lentils and 2 cups of water. Start cooking on medium.
Grate two small carrots. Add.
Chop and skin one green apple, eat the skins, chop apple into little chunks and put in.
Add garam masala, turmeric, cinnamon, cumin, garlic, and ginger to taste. Add 1 tbsp brown sugar. I think I used a tbsp of garam masala and a tsp of everything else.
Add 1/4 cup coconut milk. Add more water if it needs it.
Cook until lentils and carrots are cooked.
* Banana Coconut Rice *
Cook 1 cup of rice. When it's done, add 1 tbp sugar, about 1/2 to 3/4 cup of coconut milk, a handful of fancy shredded coconut, and start cooking simmering again. Chop one banana into little pieces. Stir into rice. When the liquid is reduced a bit again, it's done.
Serve with the Apple Carrot Red Lentils Curry.
