    If someone has good recipes for burgers please post.

    One more thing.

    me 2 . I've tried these recently.

    2 soft. MUCH 2 SOFT

    I want my veggie burger like meat burger. FIRM

    What could you use to make it FIRM?

    I've used 2 T of potato starch and flour. Didnt help much.

    BURGER SHOULD B FIRM AND JUICY.

    Maybe you could throw more oatmeal or add some seeds to it, Basteq.

    How about nutritional yeast?

    You could also try baking the burgers and then pan-frying.

    hi basteq,

    i tried this recipe this morning making sausages, they were delicious. instead of folding them into sausage shapes, fold them into patties and fry them. theyre firm and crispy and delicious. (mix sum sage into the mixture aswell and it tastes decadent)

    made them today.
    And they were not so firm as I was hoping for. Pretty ok. but still they were floating away when i put those patties in bun. I've made also two sausages out of it. They were yummy.

    heres a recipe for burgers i got from "veggie for life" magazine:

    baked portobello soy-nut burgers:

    -1 cup chopped onion
    -3/4 cup chopped carrots (about 1 medium)
    -1 tbs olive oil
    -1 cup walnuts
    -1 15 ounce can black soybeans, drained
    -1 cup dried bread crumbs
    -1/4 cup minced parsley
    -2 tbs almond butter
    -1 tbs boullion powder or paste
    -1 tbs minced fresh thyme
    -1 tbs tamari or other soy sauce
    -1/2 tsp garlic powder
    -salt and pepper, to taste
    -cooking spray or oil

    1.preheat oven to 400 degrees and lightly brush or spray a nonstick baking sheet with oil.

    2.using a food processor, mince onion and carrot finely. in a medium skillet over medium heat, saute onion and carrots in oil until limp, 4-5 minutes.

    3.in the food processor, grind nuts until fine, but not powder. transfer to a large bowl. add beans to processor bowl and pulse to a coarse meal, but dont puree. add to bowl.

    4. stir in bread crumbs, parsley, almond butter, bouillon powder, thyme, tamari, garlic powder, salt and pepper. mix with your hands and knead to combine.

    5. bake for 25 minutes, let cool.

    per burger, w/o bread: 402 calories, 17 grams protien, 24 grams fat (3 grams saturated fat), 36 grams carbs, 673 mg sodium, 0 mg cholesterol, 6.8 grams fiber.

    it says to put the burger mixture on 6 portobello mushrooms (after scraping out the gills) and bake that way, but id rather just have the mixture. i did the recipe a bit different because i didnt have sum ingredients but they turned out delicious.

    I've never made my own vegan burgers, but the brand name of the mix I like is Fantastik. I'm in the US tho. Don't know if it is available wherever you are.

    I just made some chickpea/rice/oatmeal burgers. They taste good on a wheat bun with romaine and tomato, but man, do they fall apart, while cooking and eating. That's part of the problem with vegan burgers, I think.

    Well, I was reading books by Dr. Neal Barnard, and in it, he emphasizes that a healthy vegan diet includes whole grains, legumes, vegetables, and fruit, and that a healthy diet is a low-fat diet, including about 10 to 15% of calories from fat. Nuts and seeds get over 75% of their calories from fat.

    While I don't think it is bad to eat nuts and seeds ocassionally, I do not include them in my morning oatmeal anymore and will stop making the pecan-cashew balls. I have found that I have more energy now and that I feel less weighted down. I think my metabolism went up even higher, and I am not tracking my calorie or Point count anymore. Complex carbohydrates increase your metabolism, Dr. Barnard explains. I bet the Atkins dieters would love to hear that.

    Anyway, so the reason is to cut down on calories from fat intake. I have also cut down on using canola and extra-virgin olive oil. I am emphasizing the Four New Food Groups!

    Artichoke, I know you are very balanced and knowledgeable and I agree with Dr. Barnard's principles set forth, especially The New Four Food Groups information. Just be sure you are getting enough EFA's (removes her "Mom" hat and quietly goes back to her corner...)

    Yes, thank you for caring, CC. I appreciate it! I'm just trying to reduce the nut intake. I felt like they weighed me down, and I want to fill up with more legumes!

    I used almonds in my crust for the sweet potato pie I've been eating two slices of a day.

    Default veggie burger recipe

    they were making this recipe on the cooking show "everyday food" and i decided to copy it down as they were saying it. so here it is. (they used egg, but i just replaced it for egg replacer)

    3/4 cup uncooked brown lentils
    3/4 cup walnuts
    1/3 cup bread crumbs
    3 cloves garlic, chopped
    2 tsp ground cumin
    2 tsp ground coriander
    1/4-1/2 tsp red pepper flakes
    1 1/2 tsp salt
    1/4 tsp pepper
    1 tbs olive oil
    egg replacer equal to 1 egg

    cook brown lentils, and put aside.

    process all ingredients except lentils, egg replacer and oil until fine, but dont make it into a paste.

    add lentils, and olive oil. pulse until broken down but some lentils keep their shape. place into bowl and add egg replacer. mix until combined.

    form into four patties, and fry until brown on each side over med-high heat. takes bout 8-10 minutes per side.

    makes four burgers.

    mmmm these sound delicious (and CHEAP which is always a great plus!)

    I saw a really tasty looking burger patty on that "You are what you eat" program today, it was a chickpea burger, not sure if it is in one of Gillian Mc Keith's cookbooks, does anyone have a book that contains this recipe?

    Black Bean Burgers

    2 cups cooked black beans, drained
    1 tbsp. minced fresh onion
    1 tsp minced fresh garlic
    3 tbsp. finely chopped green bell pepper
    3 tbsp. finely chopped red bell pepper
    1 tsp chopped fresh cilantro
    1/4 tsp minced canned jalapenos
    dash of cayenne
    salt and pepper to taste
    breadcrumbs

    Mash 1/2 cup of the beans. Put in a bowl with the rest of the beans. Mix well.
    Add all the rest of the ingredients except breadcrumbs. Mix well.
    Add sufficient breadcrumbs to make a mixture that can be formed into patties
    that will hold together. Form into patties. Fry in a little oil until browned.
    These freeze well.

    Of all the vegan burgers I've made, the best one is simply a portabello mushroom marinated in teriyaki sauce and minced garlic, and then grilled for about five minutes each side.
    I really didn't like mushrooms until my husband turned me on to these. Now, I love them!

    I was given her cookbook and here is the recipe you wanted..

    Makes 20 burgers apparently !

    410g can chickpeas drained and rinsed
    410g can redkidney beans, drained and rinsed
    1 carrot, trimmed, peeled and finely grated
    1 small onion peeled and finely grated
    50g sunflower seeds
    2 tbsp tahini, drained of any excess oil before measuring
    1 garlic clove, peeled and chopped
    1 handful chopped fresh coriander
    1 tbsp wheat-free vegetable bouillon powder

    1. Preheat oven to 220C/gas mark 7. Line a large baking tray with greaseproof paper.
    2. Place all ingredients in a food processor or with a hand-held blender, blend for 5 - 10 secs, until the mix is fairly coarse. Push the mixture down with a spatula and blend for a further 10 secs.
    3. Remove blade from processor, wet your hands under the cold tap and shape the mixture into 20 balls.
    4. Place the balls on the prepared baking tra and flatten slightly with the back of a spoon.
    5. Bake for 15 - 18 mins until lightly coloured. Remove from oven and allow to rest.

    They sound nice actually, think I will make some too

    Tofu Burger makes: 6 burgers1 lb tofu
    1/2 cup whole wheat flour
    3 Tbsp. nutritional yeast
    2 Tbsp. vegetable bouillon powder
    pepper to taste
    2 Tbsp. soy sauce
    1/4 cup (or more) sesame seeds
    1 small scrubbed potato
    1/4 tsp. (or more) garlic powder
    onion powder to taste, or one small onion
    Grind the tofu, potato and onion (if using) in a food processor. Don't let it get too fine. Mix in remaining ingredients, shape into burgers and bake at around 350 degrees on a very lightly oiled cookie sheet for 15-20 minutes, turning once. They can also be fried.

    I got a recipe for spicy bean burgers that I made last week. They tasted amazing. Like the spicy bean burgers from burger king.

    Heres the rough recipe. It doesnt have to be perfect.

    I used kidney beans and soaked them overnight. I weighted them and it was around 850g.

    Then get one onion dice it up. Get it going in a frying pan with some olive oil in it. Add to that a 1.5 cloves of sliced fresh garlic. Let it salute for 5 mins or until it just starts browning.

    Have ready in a small cup the following -

    1 tablespoon plain flour
    1 teaspoon paprika powder
    1/2 teaspoon cumin powder
    1 teaspoon ground corriander seeds

    mix these all up in the cup.

    When the onions have just started to brown add the cup and stir quickly for around a minute. Dont let the flour cook.

    Also get 3 carrots and dice them up. Boil them in a saucepan until soft, then drain and set aside.

    Mash the kidney beans and carrots up in a bowl and add some some sweetcorn. To this add the contents of the frying pan.

    Mix it up and then shape into burger shape. Put on bread crumbs and fry in oil.

    They taste amazing - only problem I had was they were quite soft and fell apart easily. If anyone knows how to make them firmer it would be much appreciated.

    Oh you can also add other ingriedients such as peppers - i think theyll work and ill be putting them in my next serving

    i dont have 'her' cookbook but i have got a 'you are what you eat' recipe book and theres a lot of good stuff in it

    its quite health & veggie-orientated...even though there are some meat dishes in there. if you wanna buy it, try & find a big bookstore, so you can have a flick through it before you buy

    I have made a lot of different types of sausage and burgers, kind of a hobby of mine. I have found that batter or oatmeal based burgers won't give you the texture I think your looking for. When I want something that will stand up to a bun with a load of toppings, I usually make something like this one from a site where I keep my "experiments". I'm in the process of rewriting and adjusting the recipes there, so try what you like there at your own risk! Actually most of them only need a little adjusting here and there.Dan's Vegan Recipes
    This burger has a cheese flavor from the lemon, tahini, and NYF.

    Bring to a boil;
    3 c. water
    2 vegetable bouillon cubes

    Add, cover and turn off heat, let set 5 minutes;
    3 c. TVP (crumbles not chunks)
    Add;
    1 T. lemon juice
    1 T. minced garlic
    2 T. tahini
    1/2 t. onion powder
    1/2 t. cumin
    2 t. ground sage
    1/4 c. vegetable or olive oil (optional)
    4-6 T. NYF (nutritional yeast flakes)
    1 t. black pepper
    Keep covered, let set another 10 minutes, stirring occasionally
    Add 1/4 c. at a time, mixing until well combined;
    1 c. vital wheat gluten

    Make into patties and bake at 450' on a lightly oiled or sprayed sheet tray for
    12 to 15 minutes each side.

    please share your fave veggie burger recipe as it's something I have been craving for a few days but am always disappointed with shop brought ones.
