Quesadillas - easy recipe

had these as a light supper last night - easy and quick.

tortillas
canned refried beans
grated 'cheezly' or sliced tofutti (optional)
bottled taco dip/sauce
fresh chilli (optional)
oil for frying


1. finely chop chilli if using. spread one half of open tortilla with refried bean mix and sprinkle some chilli over.
2. sprinkle 'cheese' if using.
3. dollop taco sauce over and fold over to semi-circle shape.
4. heat a very little oil in frying pan and fry each side of torilla till brown and crispy.

i served them with side salad, extra taco sauce over the top of the quesadillas and also whipped up a vegan tzaziki.

Mmmm just need guacamole I had spinach and cheese quesadillas a few times before I was vegan. Bet they'd be good with cheezly.

Is it a chimichanga when you fold them into little parcels and fry them? I get a bit confused with all the names! They would be good using your ingredients too.

spinach and mushroom with soy cheese is awesome too!!

sometimes i even put bruschetta in a plain soy cheese quesadilla and it gives it a nice kick.

Mmmm I love quesadillas! This post made me so hungry . . . lunch time I think!!

Also you could put sauteed onions in them if you wished, for added crunch and flavour!
