had these as a light supper last night - easy and quick.
tortillas
canned refried beans
grated 'cheezly' or sliced tofutti (optional)
bottled taco dip/sauce
fresh chilli (optional)
oil for frying
1. finely chop chilli if using. spread one half of open tortilla with refried bean mix and sprinkle some chilli over.
2. sprinkle 'cheese' if using.
3. dollop taco sauce over and fold over to semi-circle shape.
4. heat a very little oil in frying pan and fry each side of torilla till brown and crispy.
i served them with side salad, extra taco sauce over the top of the quesadillas and also whipped up a vegan tzaziki.
