    Default Green velvet soup

    From The Peaceful Palate by Jennifer Raymond

    Makes 10 servings


    1 onion, chopped
    2 stalks celery, sliced
    2 potatoes, diced
    3/4 c. split peas, rinsed
    2 bay leaves
    6 c. water or vegetable stock

    2 medium zucchini, diced
    1 medium stalk broccoli, chopped
    4 c. spinach, chopped
    1/2 tsp. basil
    1/4 tsp. black pepper
    1 tsp. salt


    Place the onion, celery, potatoes, split peas, and bay leaves in a large pot with the water or vegetable broth and bring to a boil. Cover and simmer for 1 hour.

    Remove the bay leaves. Add the remaining ingredients with the exception of the salt. Simmer for 20 minutes.

    Transfer to a blender in several batches and puree until smooth. Return to the pot, add salt to taste, and heat until steamy.

    Per serving: 120 calories, 5 g. protein, 0 g. fat

    arti, what does c. mean in yr measurements? do you mean cc?

    No, it's "cup."

    I don't even know what "cc" is. LOL

    hmmm do u think anything else would work instead of spinach? maybe tomatoes or extra zucchini?

    Extra zucchini should work. I don't think tomatoes would, though. You could try it and see.

    well i got sum spinach today so im going to make this soup tommorow im very excited.

    I made the soup and it is very delicious. It looks like green velvet too . Robert also liked it, and normally I cannot get him to eat many greens, especially zucchini

    I bet other greens would work in this as well.

    One would have to adjust cooking times and flavourings to compensate if thicker leaves being cooked, though.

    i thought this was okay, but it tasted really 'earthy' to me so i didnt like it THAT much. but it was still nice. very rich.
