I hate mushrooms too - I practically have a phobia about having them in my mouth.
I used to hate augergines (eggplant), it's the shiny purple bulbousness that puts me right off, along with the weird grey mush-like insides, and the old thing about have to salt it to stop it being bitter... well so I hadn't eaten one until recently and actually I really like it, and hope I can get over the look of it to try cooking it myself.
But I know I'll never get on with mushrooms as I have tried bits of them before and it's just the texture, taste, smell... oh it's revolting, I can't bear it!!!!
Anyway back to xmas dinner!!!! I still haven't gotten to a place that I can buy some tofurky from. Maybe hubby and I can go for a frolic in Londontown on Friday afternoon/evening. Or I could wait until the week before xmas when he's jacked in work and we can spend all weekday down there... but there might not be any tofurky left by then!!
I used to have irrational fears about mushrooms and eggplants and such, but I started eating them little by little.... Here's what first got me onto mushrooms.. It's called a mushroom sandwich, enjoy
Table spoon (15ml) or so of olive oil
2 cloves garlic
2 cups (500 ml) white mushrooms
pinch of salt and pepper
several slices of whole wheat or rye bread (preferably thinly sliced), halved
Slice the mushrooms, chop the garlic
Saute the garlic in the oil over medium heat for a couple of minutes..
Add the mushrooms, salt, and pepper
Saute for about 5 minutes or so with the lid on, stirring occasionally.
Transfer to a food processor, and process until combined and a bit chunky.. You want the mushrooms to be in little chunks, not a paste...
Spread on bread, top with more bread
Broil in oven until toasty, then turn them over and do the other side.
Serve warm or cold (They also freeze very well, just pop them in the toaster oven to reheat)
I HATED mushrooms, but loved these sandwiches... Then my grandmother told me what they were made out of.. Still at them exclusively for years before overcoming my fear.. Enjoy!

Well, I didn't mean to start a mushroom controversy! I looooove them myself, but can see how some might not. When we grill we marinate button mushrooms in teriyaki, soy sauce, beer, garlic, worcestershire, and whatever else, and they are so delicious.
...And here's the part where I admit I'm a compulsive recipe collector. If I see a recipe online or in a magazine that I may want to try someday, I keep it. I have three binders of recipes and am currently working on a project to type up an index to make them easier to navigate. So, when I wanted a recipe for stuffed mushrooms I had a couple to choose from. I also have at least 13 vegan cookbooks.
So, most of the recipes I am using are printed from the internet. The artichoke dip and the mushrooms and spiced nuts I have never made. (mushroom recipe is at http://www.fatfreevegan.com/appetizers/1012.shtml.) Hummus is just a standard recipe, and the ranch recipe I got from this forum somewhere. For the veggie dogs in blankets, I'm just planning to cut up tofu dogs and wrap them in packaged crescent rolls, if I can get them from my store. Snickerdoodles are from www.foodtv.com (with margarine and egg replacer substituted), three kinds of cookies from a recent Vegetarian Times, and the other from some other magazine...If anyone wants a specific recipe, message me and I can send it when I'm at home.

We went round to my vegetarian MIL's but had to bring our own 'main'. It was a sosmix & veg lattice pastry from Meals Without Squeals that I made the other day for another xmas meal, and MIL had made vegan-ok roast potatoes, green beans, roasted sweet potato, carrots and sprouts. And gravy, and some cranberry sauce that was very sour. It was a nice meal, I couldn't quite finish it all, and I felt it was a bit of a shame no-one else was interested in having our pastry with us because it was delicious! They wanted quorn kievs instead (vegetarians really don't know what they miss out on when they rely on quorn).
I really messed up when preparing the recipe for the sosmix-lattice though - I was reading the scales all wrong, forgot to balance them before I started, etc etc, it was a bit of a shambles, but I managed to make up two lots of it, with only a tiny bit of left over mixture. So I was quite pleased it turned out OK even though I got quite stressed trying to make it!!
We had a vegan family xmas at our place yesterday
My family all came over and enjoyed a big vegan feast with us. Wasn't a "traditional" meal at all, but nicely different - we had an indian style buffet with curries, daal, pakoras, rice and naan bread etc. Also some of the usual stuff like roast potatoes and vol au vents (which I made for first time thanks to parsleysoup.co.uk - thanks Cherry!) and baked a chocolate cake, lemon cake and carrot cake with some soya cream and squirty cream to go with them.
Was great to see everyone tuck in and say how full they were later - no complaints. My dad even took some food home with him. My best xmas yet!

I've never tried tofurkey, would try it if it were offered to me because I believe in trying new things, but won't go out of my way to try it because I hated eating turkey when I was an omni.

i dont celebrate holidays because of their background, but i love to celebrate for any reason, so holidays are great for me. my mom ALWAYS made special dinners on every holiday so i like to do the same.
im not sure what ill make for easter, maybe vegan lasagna or something similar.
and lots of vegan chocolate!!! because afterall, easter to me is just about the sweets lol. and all the cute baby animals and spring time and flowers.

i usually make my kids one (milk chocolate) egg and then do moulded choc shapes..i won't buy easter eggs anymore..because of the unecessary packaging and am loathe this year to make milk chocolate eggs.
they aren't too fussed on dark chocolate..and not a fan of giving gifts that they don't really need to celebrate something that i don't go in for.
i think all these years i've got caught up in the whole egg giving thing.
so, whinge aside..can anyone please recommend any non dairy good easter eggs please? or alternative suggestions. TY.

Any ideas for St. Patty's Day? My (non-veggie) boyfriend is having an all-day barbecue (not exactly traditional...) and as usual I need to take food for myself, and would like to share. I know I want to make colcannon (potatoes & cabbage), but every other Irish recipe I've come across also has potatoes. I'm thinking of just going with a green theme...

Pumpkin pie for our Bristol vegans meet up on Saturday at my house and it went down an absolute storm. None left at all! I made it in a deeper dish so cooked it a bit longer. It was just like a cooked custard - yum. Our meet up was for St Patrick's day, but I had some pumpkin in my veg bag that needed using up.
That website is brilliant! I highly recomend the prune and balsamic cookies which I made as brownies by substituting agave syrup for the sugar and throwing in some dates and nuts.

I'm not sure if this counts as easter dinner, but tomorrow night my best friend is coming over to watch a movie, and I'm going to make homemade vegan pizza. He's an open-minded omni, so I'm sure he'll like my pizza. It's going to have veggie pepperoni, red pepper, spinach, green onions, and vegan gourmet mozzarella cheese. He also has a HUGE appetite, so I might make some garlic toast or salad on the side. Not traditional easter dinner, but it still counts in my book

does the cheese melt for you on pizza? it doesnt melt that well when i make pizza with it. some people have said to put it on the top rack, on 500 degrees/broil, so that it melts. i bake my pizzas at around 400 on the middle rack.

I usually bake at 425 on the middle rack, then when the crust is done, I broil it for about 30 seconds, and that makes the cheese really nice and bubbly.
BTW it was my friend's first time ever eating vegan pizza, and he loved it! He's usually pretty open-minded, but he admitted that he had his doubts beforehand, but when he tried it he said it tasted just like regular pizza . I still have some dough left, so I might make myself another pizza today. It was sooo good!

Mmm, the pizza was SO fantastic! It was my very first time using a homemade crust. Before, I always bought the Chef Boyardee crust mix, which had hydrogenated oils but at least was vegan. But they discontinued it, so I made my own crust and added basil and oregano, and let it rise so it would be thicker, and it turned out sooo amazing! I think the crust was the best part of the whole pizza! And my friend, who had never eaten vegan pizza before, LOVED it too.

its thanksgiving today so im making us a big dinner. i was going to make a nut roast mmm, but steev hasnt tried the tofurky yet and really wants to. so this is what were goona have:

steev was amazed by the tofurky and said that it was SOOOO good and he ate until he looked pregnant and it was really funny. and hes been walking around screaming about how he doesnt understand how anyone couldnt like the tofurky. then today he had a tofurky sandwich and has been walking around all day screaming about how anyone who doesnt like the tofurky is crazy and musnt know how to cook. lol. so i guess he loves tofurky than. hes not even vegan. he says its much better than real turkey because real turkey is dry and hard to eat and yucky and makes you feel gross.

Reading through all these posts took *foreva*.
Situation: I am a new vegan. I am eating Thanksgiving dinner with my future in-laws who think mere vegetarianism will make your teeth turn black and fall out (seriously). Originally, I was going to do a vegetarian Thanksgiving before going full vegan, because I thought that might make the transition easier for the in-laws. Now I'm thinking it would just confuse them about what I can and can't eat, because they would always wonder why I ate eggs and milk at that one Thanksgiving....
We're in the Midwest. They like bland, traditional American food. Originally I thought I would bring a nut roast (all of the recipes look so good!), but now I'm thinking that would be too "weird" for them. Does anyone have a tried-and-true pot pie or shepherd's pie recipe? Maybe one involving boca crumbles (my omnivorous mother, grandmother, and fiance will happily eat those in just about anything, so I think the in-laws would like them too).
Also, this will sound really stupid, but does anyone have recipes for garlic mashed potatoes, candied carrots, baked apples, or zucchini bread? I saw these things mentioned in the thread, but didn't see any recipes. I'm very new to cooking, so I don't know how to cook even basic stuff! Detailed instructions with exact measurements would be very helpful as I am a bit OCD (the phrases "a pinch of this" and "season to taste" terrify me!).

Ultimate Shepard's Pie -- taken from Vegan Planet
2 Tbs olive oil
1 large yellow onion
1 large carrot, chopped
4 oz white mushrooms, chopped
1 tbs tomato paste
2 tbs tamari (soy sauce)
1 c vege stock
1 tsp minced fresh thyme leaves (or 1/2 tsp dry)
1 tsp fresh minced marjoram (or 1/2 tsp dry)
salt and pepper
1 tbs corn starch dissolved in 2 tbs water
3 frozen vege burgers thawed and crumbled (or sub the boca crumbles )
1/2 c frozen green peas, thawed
1/2 c ground walnuts
3 c mashed potatoes
1/4 tsp paprika
1.) preheat oven 375. Heat 1 Tbs olive oil in a large skillet over medium heat. Add onion and carrot. Cover and cook until tender ~5 minutes. Add mushrooms and cook stirring occasionally for 3 minutes. Stir in tomato paste, soy sauce, stock, thyme, marjoram, s & p to taste. Stir in corn starch mixture and simmer to thicken slightly ~1 minute.
2.) Spoon filling mixture into a lightly oiled 2 1/2 quart baking dish. Stir in chopped burgers, peas, and walnuts. Taste, adjust seasonings. Spread mashed potatoes over the top. Sprinkle with paprika and drizzle with remaining 1 tbs olive oil.
3.) Bake until potatoes are hot and bubbly and the top is golden brown ~30 minutes.
Serve hot

i get instant and use soy milk and earth balance instead of milk and butter (just check ingredients as some have milk in mix)... or make them from scratch.

I might make them from scratch... kind of depends on how much time I have (and how much food I decide to make and bring). I want to bring enough food so that I can eat and not look weird, but I'm also afraid of bringing a bunch of vegan stuff that everyone will refuse to eat. At least I know my mom, grandma, and fiance will try my stuff... they might not like it, but at least they won't look at it like it's poison!

For the third year in a row; I'll go to the Farm Sanctuary California shelter and their Celebration FOR The Turkeys. It's a wonderful event and I take it as my one holiday day. (we need rain BAD in California. I just hope it does not rain that day)
As a nurse I'll work the U.S. Thanksgiving day and I don't celebrate x-mas. I'll work that day too anyway.
I will make vegan pumpkin pie and bread dressing at some time as I love those.
