Green Banana(unriped)/Plaintain Spicy Paste
First boil them in water or better cook in a Pressure Cooker ( very little water required in this). After cooking, peeling and meshing required. Now season mashed stuff in a pan in very little oil, heat the oil in a Pan, when you find smoke coming out, pour some mustard seeds and cummin seeds now add mashed banana(plaintain) stir it, add little sea salt and red salt & lemon juice. You can add black pepper if you like to make it spicy.
One can add grated capsicum(bell paper) and tomatoes too in the above paste.

Yes, one can preserve left over stuff and use it subsequently. It is good filling for Samosa/Patties/Sandwiches/Paratha. It can be eat warm or kept at room temperature.
peanut butter! either alone or with vegan "fluff", jam (gelatin free of course), chocolate, bananas, or apples. if you count hummus and pita as a sandwich, then that too! but i am known to just eat hummus out of the container with my finger...

i missed this post originally... i don't like rye bread. i find it bitter and soooo dry, no matter what i eat it with. it also always falls apart if you try to make a sandwich with it.
i don't mind spelt bread, which looks similar to rye bread but is much sweeter - but therefore i only eat it with sweet toppings otherwise the sweetness overpowers savoury flavours. it's still useless for making sandwiches!
i still haven't found any decent wheat-free bread, i've given up now and eat wheat sometimes, i probably shouldn't but i like it too much

Usually I make my sandwhich with:
toasted bread ( I really like light rye or spelt)
vegainaise
dijon mustard
smoked tomato slice ( http://www.fieldroast.com )
thinly sliced tomato
thinly sliced red onion
alfalfa sprouts
half an avacado
My other sandwhich topping/ spread I really like is this miso tahini spread. I got the recipe off of a westbrae brown miso tub. It's really tasty, and I'm sure i could make it again without the recipe. I think it's about:
2 tablespoons miso
2-3 Tablespoons tahini
1/2 cup brown rice syrup.
When you mix it together, it solidifies iton this really smooth shiny paste and then you spread it onto your bread and toast it and then it melts a little and gets a little crispy on top and its really tasty. If you try this, just add the ingredients and taste it as you go. I would start with the brown rice syrup and add the other ingredients by the teaspoon until it tastes good.
Right now I am eating a wrap filled with baked potato, cheddar chreese (cheddar flavor not recommended) and delhi saag (mustard greens with spinach).
Earlier I planned on having it with some chicken tenders but left my wraps at home.
I have also been stuffing my wraps with madras sambar (lentil with vegetables)which is DE freakin licious and fresh spinach.

MMM Ezekiel sprouted wheat bread with raw walnut butter, sliced apples, maple syrup, and sprinkled w cinnamon.
I also love the sprouted bread with mashed avocados, broccoli sprouts, heirloom tomato slices, and greek olives with a little bit of sesame tahini drizzled over the tomatoes

This week my fave is lashings of extra crunchy peanut butter with a little sliver of raspberry jam.
Wholemeal organic baguette with:That's lunch most days.
- grated carrot

- lashings of chopped onion (for keeping the omnis at work at a respectful distance )
- hummus
- black pepper
My favourite lunch is a pita filled with tomatoes, mushrooms, cucumber, black olives, dill pickles, onions, green peppers, lettuce, chickpeas and GARLIC HUMMUS.
I am addicted to the stuff, it's ridiculous.

Hummus is an amazing sandwich filler. Top it off with some veggies, and it's great.
Zuchinni and pepper sandwiches are very good. I usually just marinate them in a little basalmic vinegar dressing, then cook them and put it on a roll. It's really good.
I always toast my bread too.
AVOCADO (with tomato and mixed green leaves). The avocado must be thick and chunky if possible.
I like hulled tahini in a pita bread as well, but otherwise it is avo all the way! I don't know if toast is counted but I love citrus marmalades too on toast.

Today I had three whole wheat sandwiches filled with fresh tofu, drizzeld with flax oil and topped with nutritional yeast. Delicious... (then I had cake, a salad, soup, two bananas with A LOT of peanut butter, a bowl of cereal and soymilk, and some pasta.) That was breakfast!

For a treat ; warm ciabatta rolls (Tesco Finest are fab) filled with humus, tomato, olives, onion and either humus or pesto.
Sometimes i fill them with vegan bacon or sausage and fried onions, topped off with ketchup....... so good

the other day I microwaved like 6 (deliciously thin) slices of tofurkey brand philly steak with some olive oil, soy sauce, salt and pepper. grilled up some peppers, onions and mushrooms. buttered a big ole hoagy roll with earth balance. put thin slices of follow your heart mozzarella on earth balance. broiled the roll for a minute until cheese melted and filled the sandwich with steak slices all folded up ribbon like with mustard, onions, peppers and mushrooms. It was bomb.

My variations on humus as a sandwich filling is humus with;
pesto (homemade or bought)
grated carrot and sweet chilli sauce
sliced tomato, black olives and onion rings
bombay mix sprinkled on
sweetcorn and chopped red pepper
watercress and green olives
Two favourites at the moment:
1) smoked tofu, fried, with mashed avocado and tomato on whole wheat bread
2) almond butter and maple syrup on any bread at all

I was hoping someone could give me some ideas for interesting stuff to put in sandwiches (other than salad). Recently i've been craving sweetcorn mixed with vegan mayo it's sooooo good and i was thinking it would be really nice with redwood's nacho style cheese as a sandwich filler...mmm... my local health food shop does the most amazing vegan sandwiches EVER - they use multigrain rolls and have vegan mayo-based dressings. and they have really good fillings like veggie burger or coronation spinach (my favourite) or cheatin' meats with beansprouts etc. i'd love to be able to make my own like that, but whenever i try they turn out really boring and tasteless because i just don't have interesting ingredients in my cupboard.

Tofu is my favorite thing to put in sandwiches.
Tempeh is a second favorite.
And anything with veganaise or hummus is also great.

sandwiches are always better when somebody else makes them! weird.
If you put some vegan margarine on the bread and broil it (grill it?) for a minute or 2 til the top is brown, then put the filling in the buttered side, I find this makes the sandwich super-good! (not quite as healthy though )
The quality of the bread in general makes a big difference! and I put my bread in the fridge, but always allow it to come to room temp before eating it if I dont broil it.
tofu is my favorite filling too. I cook a chuck of tofu in olive oil til the outside is crispy, then blot it, put it in the toast with some vegenaise, bbq sauce, and onion.
Toast with veggie bacon, lettuce, tomato and vegenaise is yummy too.
Healthier: toasted bread (no marg) with lettuce, tomato and hummus.

I made a really good sandwich a little while ago with, a Redwood's Cheatin' beef slice, half a small, chopped avocado, Plamil mayonnaise and baby spinach leaves.
Veganaise on Ak-mak crackers with sweet pickles & dash of chili sauce.
I looove sandwiches but dont allow myself them so often bcause i just have to look at a nice sandwich and I get fat!I like them as enchantress said..vegan mayo,avacado and cheating meats....on nice bread....

If you live in the UK grab some Mexican Chilli Bean spread from Tesco and add sliced avocado on granery bread. Its yummy but very filling. I have yet to find a sandwich I enjoy more.

it's a type of lettuce, kinda spicy but really nice.
I love to;
Drain a can of kidney beans.
Mash with mayola/ veganaise.
Add sweetcorn, spices, seasoning.
And have it with salad in a wrap.
